  • 1 1/2 pounds (700 g) boneless skinless chicken thighs or breasts, cut into 1 inch pieces
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons fresh lemon juice (about 1 large lemon)
  • 3 cloves garlic, minced
  • 1 1/2 teaspoons dried oregano
  • 1 teaspoon dried thyme or 1 teaspoon fresh thyme leaves, chopped
  • 1/2 teaspoon smoked paprika or sweet paprika
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 to 6 large pita breads or flatbreads, warmed
  • 2 medium tomatoes, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 cup shredded lettuce or chopped romaine
  • Fresh parsley, chopped, for garnish (about 2 tablespoons)
  • For the tzatziki
  • 1 cup plain Greek yogurt
  • 1/2 English cucumber, grated and excess liquid squeezed out (about 1/2 cup)
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon chopped fresh dill or 1 teaspoon dried dill
  • Salt and black pepper to taste

How to Make this

1. In a bowl combine olive oil, lemon juice, minced garlic, dried oregano, thyme, smoked or sweet paprika, salt and pepper; add chicken pieces, toss to coat, cover and marinate in the fridge for at least 30 minutes or up to 4 hours.

2. While chicken marinates, make the tzatziki: grate cucumber and squeeze out excess liquid, then mix with Greek yogurt, minced garlic, lemon juice, olive oil, chopped dill, and salt and pepper to taste; refrigerate until ready to use.

3. If using wooden skewers soak them in water for 20 minutes to prevent burning; thread marinated chicken onto skewers, leaving a little space between pieces for even cooking.

4. Preheat grill or grill pan to medium high and brush with a little oil; cook skewered chicken 4 to 5 minutes per side or until internal temperature reaches 165 F (74 C) and edges are nicely charred.

5. Alternatively, cook chicken pieces in a hot skillet with a drizzle of olive oil, stirring occasionally, until cooked through and lightly browned, about 8 to 10 minutes.

6. Warm pita breads or flatbreads on the grill, in a dry skillet, or wrapped in foil in a low oven until pliable.

7. Slice tomatoes and red onion thinly and shred or chop lettuce; chop fresh parsley for garnish.

8. To assemble, spread a spoonful or two of tzatziki onto each warmed pita, add shredded lettuce, a few tomato slices and red onion, then top with cooked chicken.

9. Sprinkle chopped parsley over the gyros, add extra lemon juice or a drizzle of olive oil if desired, and fold or roll the pita to serve immediately.

10. Serve remaining tzatziki on the side for dipping and enjoy while hot.
