I’m obsessed with Avgolemono Soup because it hits that rare spot between bright, creamy, and seriously satisfying without feeling heavy. I love how the lemon cuts through the rich flavor and makes every spoonful taste sharp, silky, and alive.

This is the Greek soup I crave when I want something clean but not boring, comforting but not sleepy. And that tangy egg-lemon broth?

Ridiculously good. I like it with fresh dill because it adds that grassy pop that keeps me going back for another bowl.

But honestly, the lemon is the reason I can’t stop thinking about it.

Ingredient Quantities

  • 3 to 4 pound whole chicken or 2 to 3 pounds bone-in chicken pieces (thighs and breasts)
  • 10 cups water or low sodium chicken broth
  • 1 medium yellow onion, peeled and halved
  • 2 medium carrots, peeled and roughly chopped
  • 2 celery stalks, roughly chopped
  • 1 bay leaf
  • 1 tablespoon extra virgin olive oil
  • 1/2 to 3/4 cup orzo or short-grain white rice
  • 3 large eggs
  • Juice of 3 large lemons (about 1/2 cup), freshly squeezed
  • 1 teaspoon kosher salt plus more to taste
  • 1/2 teaspoon freshly ground black pepper plus more to taste
  • 2 tablespoons chopped fresh dill, plus extra for garnish
  • 1 to 2 tablespoons chopped fresh parsley (optional)

How to Make this

1. In a large pot heat 1 tablespoon olive oil over medium heat, add the halved onion, carrots and celery and cook until softened, about 5 minutes.

2. Add the whole chicken or bone-in pieces, 10 cups water or low sodium broth, 1 bay leaf, 1 teaspoon kosher salt and 1/2 teaspoon black pepper; bring to a boil, then reduce heat and simmer gently, uncovered, until chicken is cooked through and tender, 35 to 45 minutes.

3. Remove the chicken to a plate and set aside to cool slightly; strain the broth through a fine sieve into the pot to remove vegetables and any impurities, return the clear broth to the stove and keep warm over low heat.

4. When the chicken is cool enough to handle, discard skin and bones and shred the meat into bite sized pieces; reserve.

5. Add 1/2 to 3/4 cup orzo or short grain white rice to the warm broth and simmer until tender, about 8 to 12 minutes for orzo or 15 to 20 minutes for rice, stirring occasionally.

6. While the orzo or rice cooks, whisk together 3 large eggs in a medium bowl until smooth, then whisk in the juice of 3 lemons (about 1/2 cup) until combined.

7. Temper the egg lemon mixture by slowly ladling 1 cup of hot broth into the bowl in a steady stream while whisking constantly to warm the eggs.

8. Lower the heat to the lowest setting and slowly stir the tempered egg lemon mixture back into the pot of hot broth, stirring constantly until the soup is silky and slightly thickened, do not boil or the eggs may curdle.

9. Stir in the shredded chicken, 2 tablespoons chopped fresh dill and 1 to 2 tablespoons chopped fresh parsley if using; taste and adjust seasoning with more kosher salt and freshly ground black pepper as needed, garnish with extra dill and serve hot.
