I can never resist chicken wrapped in crispy bacon, especially when a glossy maple glaze makes every juicy bite sweet, smoky, and savory. This is the kind of dinner that disappears fast.

I’m obsessed with this bacon-wrapped chicken because it hits every craving I have at once: juicy meat, salty crisp edges, and that sticky little swipe of pure maple syrup that makes the whole thing impossible to ignore. I love how thick cut bacon turns bold and crackly while the chicken stays tender underneath.

No sad, dry dinner energy here. Just big flavor, glossy edges, and a plate I keep picking at before it even reaches the table.

And honestly, I like that it feels a little extra without being fussy. But mostly, I’m here for the bacon.

Every single time.

Ingredients

  • Chicken breasts keep it hearty, lean, and weeknight-friendly without feeling too heavy.
  • Thick-cut bacon brings smoky crunch and honestly makes the whole thing more fun.
  • Kosher salt wakes everything up, so the chicken doesn’t taste flat.
  • Black pepper adds a little bite without taking over the plate.
  • Garlic powder gives that cozy, savory flavor everyone expects.
  • Smoked paprika adds color, warmth, and a tiny backyard barbecue vibe.
  • Olive oil helps the seasoning cling and keeps things from feeling dry.
  • Maple syrup adds sticky sweetness that plays so well with bacon.
  • Dijon mustard cuts the sweetness with a sharp, grown-up little tang.
  • Brown sugar helps create that glossy, caramelized finish you’ll want extra of.
  • Apple cider vinegar keeps the glaze bright, not cloying.
  • Melted butter makes the glaze richer and a little more luxurious.
  • Plus, fresh herbs make it look pretty and taste fresher.
  • Basically, it’s sweet, smoky, salty chicken that feels special but still easy.

Ingredient Quantities

  • 4 boneless skinless chicken breasts (about 6 to 8 ounces each)
  • 8 to 12 slices thick cut bacon
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1/4 cup pure maple syrup
  • 1 tablespoon Dijon mustard
  • 2 tablespoons packed brown sugar
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon chopped fresh parsley or thyme for garnish, optional

How to Make this

1. Preheat oven to 400 degrees F and line a baking sheet with foil or parchment; place a wire rack on the sheet if available.

2. Pat chicken breasts dry and season both sides with kosher salt, black pepper, garlic powder, and smoked paprika.

3. Lightly brush each breast with olive oil to help the bacon adhere and promote browning.

4. Wrap each chicken breast with 2 to 3 slices of thick cut bacon, overlapping slightly and tucking ends under the breast to secure.

5. Place the wrapped breasts on the prepared rack or baking sheet, seam side down, leaving space between pieces.

6. Bake for 25 to 30 minutes or until the chicken reaches an internal temperature of 160 to 165 degrees F and the bacon is mostly cooked through.

7. While the chicken bakes, whisk together maple syrup, Dijon mustard, brown sugar, apple cider vinegar, and melted butter until smooth to make the glaze.

8. During the last 5 minutes of baking, brush the tops of the bacon with about half of the glaze, return to the oven, and continue baking until glaze is tacky and chicken reaches 165 degrees F.

9. If you want extra crispy bacon, finish under the broiler for 1 to 2 minutes, watching carefully to avoid burning.

10. Remove from oven, let rest 5 minutes, brush with any remaining glaze, and garnish with chopped fresh parsley or thyme before serving.

Equipment Needed

1. Oven
2. Baking sheet lined with foil or parchment
3. Wire rack that fits the baking sheet
4. Instant read meat thermometer
5. Small mixing bowl
6. Whisk
7. Pastry brush or silicone brush
8. Tongs
9. Cutting board and chef knife
10. Measuring spoons and measuring cups

FAQ

Cook until the thickest part reaches 165 F using an instant read thermometer, then rest 5 minutes so juices redistribute.

Use 2 to 3 slices per breast depending on size and bacon width. Thick cut browns well and stays sturdy while baking.

Tuck ends underneath, secure with toothpicks if needed, and start bacon seam-side down on the pan so it holds as it renders.

Brush a thin layer of the maple syrup, Dijon and brown sugar glaze in the last 8 to 10 minutes of baking and again after resting for a sticky finish. Applying too early can cause burning.

Roast at 400 F so bacon crisps while chicken cooks through. Baste with melted butter or pan juices once or twice and pull at 165 F, then rest 5 minutes.

You can assemble and refrigerate up to 24 hours before baking. To reheat, cover and warm in a 325 F oven until 140 F, then uncover and broil briefly to re-crisp bacon while monitoring closely.

Bacon-Wrapped Chicken Recipe Substitutions and Variations

  • Bacon: prosciutto or pancetta for a saltier, crisp finish; turkey bacon for lower fat; thinly sliced ham if you want milder flavor.
  • Pure maple syrup: honey for a floral sweetness; agave nectar for a neutral, gluten free option; brown rice syrup for less sweetness and a milder profile.
  • Dijon mustard: stone ground mustard for more texture; yellow mustard for milder tang; 1 teaspoon prepared mustard mixed with 1 teaspoon white wine vinegar if you need a Dijon-like acidity.
  • Packed brown sugar: coconut sugar for a less refined option with similar caramel notes; light muscovado for deeper molasses flavor; granulated sugar plus 1 teaspoon molasses if you need a pantry swap.

Pro Tips

– Give the chicken a quick dry-brine up to an hour ahead: sprinkle the salt and a little pepper, then leave uncovered in the fridge. It firms the meat and concentrates flavor without changing the texture.

– Partially cook the bacon or use slightly thicker slices so it crisps without overcooking the chicken. If you do precook, keep it pliable so it still wraps nicely. Alternatively, tuck the bacon ends well and use a couple of toothpicks if needed to prevent slipping.

– Use an instant-read thermometer and pull the chicken right at 160 degrees F, then tent and rest. Carryover heat brings it to a juicy 165 degrees F without drying out.

– Make the glaze a little ahead and taste for balance. If it tastes too sweet, add a splash more vinegar or mustard. Brush in thin layers near the end so the sugars caramelize rather than burn, and finish under the broiler for extra color if you want it crisp.
