I keep coming back to this Baked Lemon Butter Chicken for its juicy, golden finish and glossy lemon butter sauce. It looks restaurant worthy, but it belongs right on my dinner table.

I’m obsessed with Baked Lemon Butter Chicken because it hits that bright, rich, savory spot I always crave after a long day. The bone-in, skin-on chicken thighs come out juicy with crisp edges, and lemon cuts through the butteriness so every bite feels bold, not heavy.

  • 4 bone-in, skin-on chicken thighs (about 2 pounds)
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 4 tablespoons unsalted butter (1/2 stick), melted
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • Juice of 1 large lemon (about 3 tablespoons)
  • 1 lemon, thinly sliced for baking
  • 1/2 cup low sodium chicken broth
  • 1 tablespoon honey or maple syrup (optional)
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme
  • 2 tablespoons fresh parsley, chopped for garnish

How to Make this

1. Preheat oven to 400 degrees F (200 degrees C). Pat the chicken thighs dry and season both sides with 1 1/2 teaspoons kosher salt, 1 teaspoon black pepper, and 1 teaspoon paprika.

2. In a small bowl combine 4 tablespoons melted butter and 2 tablespoons olive oil.

3. Heat a large ovenproof skillet over medium high heat. Add the butter oil mixture and when hot place the chicken thighs skin side down. Sear until the skin is deep golden and crisp, about 5 to 7 minutes.

4. Flip the thighs and sear the second side 1 to 2 minutes, then transfer the chicken to a plate.

5. Reduce the heat to medium, add 4 cloves minced garlic to the skillet and cook, stirring, about 30 seconds until fragrant.

6. Pour in the juice of 1 large lemon (about 3 tablespoons), 1/2 cup low sodium chicken broth, and 1 tablespoon honey or maple syrup if using. Stir in 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme and simmer 1 to 2 minutes to combine.

7. Return the chicken thighs to the skillet skin side up, spoon a little sauce over each piece, and tuck thin lemon slices around and on top of the chicken.

8. Transfer the skillet to the preheated oven and bake 20 to 25 minutes, or until the internal temperature at the thickest part reaches 165 degrees F and juices run clear.

9. Remove the skillet from the oven and let the chicken rest 5 minutes. Spoon pan juices over the thighs and check seasoning, adjusting salt and pepper if needed.

10. Garnish with 2 tablespoons chopped fresh parsley and serve with extra pan sauce.
