  • 8 ounces (225 g) flat rice noodles
  • 1 pound (450 g) boneless skinless chicken breast, thinly sliced
  • 2 tablespoons vegetable oil
  • 3 garlic cloves, minced
  • 2 large eggs
  • 2 cups bean sprouts, rinsed
  • 4 scallions, sliced into 1 inch pieces
  • 1 small carrot, julienned or thinly sliced
  • 1 small shallot, thinly sliced
  • 1/2 cup roasted peanuts, coarsely chopped
  • 2 tablespoons tamarind paste
  • 3 tablespoons fish sauce
  • 2 tablespoons palm sugar or light brown sugar
  • 1 tablespoon lime juice plus lime wedges for serving
  • 1 tablespoon soy sauce
  • 2 teaspoons chili flakes or 1 to 2 Thai chilies, minced, to taste
  • 2 to 4 tablespoons warm water, to loosen the sauce as needed
  • Fresh cilantro for garnish, optional

How to Make this

1. Soak or cook the 8 ounces flat rice noodles according to package directions until just tender, drain, toss with 1 to 2 teaspoons oil to prevent sticking and set aside.

2. Whisk together 2 tablespoons tamarind paste, 3 tablespoons fish sauce, 2 tablespoons palm or light brown sugar, 1 tablespoon lime juice, 1 tablespoon soy sauce, 2 teaspoons chili flakes or minced Thai chilies to taste, and 2 to 4 tablespoons warm water to loosen into a smooth sauce; taste and adjust sweet, sour, salty, and spicy balance.

3. Heat 2 tablespoons vegetable oil in a large wok or skillet over medium high heat until hot; add thinly sliced 1 pound chicken breast and stir fry until cooked through and lightly browned, about 4 to 5 minutes; remove chicken and set aside.

4. In the same pan add the minced 3 garlic cloves and thinly sliced small shallot; stir fry briefly until fragrant, about 30 seconds.

5. Push aromatics to one side, crack in 2 large eggs and scramble quickly until just set, then mix with the garlic and shallot.

6. Add the cooked rice noodles and the prepared sauce to the pan, tossing or stir frying to coat the noodles evenly and warm through, about 1 to 2 minutes; add extra warm water if the mixture seems dry.

7. Return the cooked chicken to the pan and add the julienned small carrot, 4 sliced scallions, and 2 cups rinsed bean sprouts; toss gently to combine and heat through for another minute.

8. Stir in about half of the 1/2 cup coarsely chopped roasted peanuts, reserving the rest for garnish, and adjust seasoning with extra fish sauce, sugar, or lime juice if needed.

9. Plate the Pad Thai, sprinkle with remaining chopped peanuts and optional fresh cilantro, and serve immediately with lime wedges on the side.
