I swear these chicken chimichangas steal the spotlight from enchiladas and quesadillas every single time. Golden, crispy, cheesy, and loaded with juicy chicken, they’re the Mexican dinner my family never leaves behind.

I’m obsessed with chicken chimichangas because they hit every craving I have for Mexican dinner in one loud, crunchy bite. I love that crackly tortilla shell giving way to juicy chicken, melty Monterey Jack, and all that bold, saucy goodness tucked inside.

Better than enchiladas when I want crunch. Better than quesadillas when I want something that feels a little extra without being fussy.

And honestly, I adore how messy, cheesy, and satisfying they are. This is the kind of dinner I keep thinking about after the plate is empty.

Crispy, stuffed, loaded. My kind of delicious.

I’m all in.

  • Chicken makes it filling, juicy, and way better than sad takeout.
  • Onion and garlic bring that cozy, “something smells amazing” base.
  • Chili powder and cumin give it warm, taco-night energy.
  • Smoked paprika adds a little campfire vibe without being weird.
  • Cayenne’s optional, but it’s there if you like a kick.
  • Green chilies keep things mild, tangy, and not too heavy.
  • Salsa adds saucy flavor so the filling doesn’t taste dry.
  • Cilantro and lime wake everything up.

    Fresh, bright, done.

  • Cheese gets melty and makes every bite feel a little extra.
  • Flour tortillas hold the good stuff and fry up crisp.
  • Vegetable oil gives that golden crunch everyone’s secretly here for.
  • Sour cream cools it down and makes it creamy.
  • Lettuce or cabbage adds crunch, which you’ll totally notice.
  • Tomatoes or pico keep it fresh and a little juicy.
  • Plus avocado or guacamole makes it richer.

    Basically, never a bad idea.

Ingredient Quantities

  • 2 tablespoons vegetable oil, plus more for frying
  • 1 pound boneless skinless chicken breasts or thighs
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper, optional
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1 (4 ounce) can diced green chilies, drained
  • 1/2 cup salsa verde or red salsa
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 2 cups shredded cheddar cheese or Monterey Jack
  • 6 large (10 inch) flour tortillas, warmed
  • Sour cream, for serving
  • Shredded lettuce or cabbage, for serving
  • Diced tomatoes or pico de gallo, for serving
  • Optional: sliced avocado or guacamole, for serving

How to Make this

1. Heat 2 tablespoons vegetable oil in a large skillet over medium heat; add chopped onion and cook until translucent, about 4 minutes, then stir in minced garlic and cook 30 seconds.

2. Add chicken breasts or thighs to the skillet and brown on both sides, about 3 minutes per side.

3. Sprinkle chili powder, ground cumin, smoked paprika, dried oregano, cayenne if using, 1/2 teaspoon kosher salt, and black pepper over the chicken; stir to coat and cook 1 minute to bloom the spices.

4. Pour in drained diced green chilies and 1/2 cup salsa verde or red salsa; reduce heat to low, cover, and simmer until chicken is cooked through, about 10 to 12 minutes.

5. Remove chicken to a cutting board, shred with two forks, then return shredded chicken to the skillet and stir in chopped cilantro, 1 tablespoon lime juice, and 2 cups shredded cheddar or Monterey Jack; taste and adjust salt.

6. Warm each flour tortilla so they are pliable, then place a generous scoop of the chicken and cheese mixture in the center of each tortilla.

7. Fold sides of the tortilla over the filling, then fold the ends and roll tightly to form a burrito shape, sealing the edges by pressing gently.

8. In a heavy skillet or sauté pan, heat enough vegetable oil for shallow frying over medium-high heat until shimmering. Fry chimichangas seam side down first, turning until all sides are golden brown and crispy, about 2 to 3 minutes per side; drain on paper towels.

9. Serve hot topped with sour cream, shredded lettuce or cabbage, diced tomatoes or pico de gallo, and sliced avocado or guacamole if desired.

FAQ

Delicious Chicken Chimichangas Recipe Substitutions and Variations

  • Chicken breasts or thighs: shredded rotisserie chicken, cooked and shredded turkey, or firm tofu crumbles for a vegetarian option
  • Shredded cheddar or Monterey Jack: Oaxaca, queso quesadilla, pepper jack for heat, or a Mexican blend
  • 10 inch flour tortillas: large corn tortillas (warm and handle gently), whole wheat tortillas, or large low carb tortillas
  • Vegetable oil for frying: canola oil, sunflower oil, or light olive oil for pan-frying; for a healthier option bake at 425°F until crisp

Pro Tips

1. Pat the chicken dry before browning so you get a nice golden crust and better flavor; it also helps the spices stick instead of sliding off.
2. If time allows, let the shredded chicken sit in the skillet off the heat for a few minutes after adding cheese so the residual heat melts it gently and the juices marry into the filling.
3. Warm tortillas in a dry skillet or wrapped in a towel in a low oven so they are pliable and less likely to tear when rolling; cold tortillas crack and leak during frying.
4. Fry chimichangas seam side down first and press gently for the first 30 seconds to seal them well; a good seal keeps the filling inside and reduces oil absorption.
5. Drain on a wire rack set over a baking sheet rather than paper towels when possible; it keeps the bottoms crisp and avoids sogginess from trapped oil.
