When Easter comes, it is an occasion for me to prepare cocktails. I have amassed a collection that includes what I consider the 12 best cocktails to serve on Easter.
While some observers might think otherwise, a couple of them are suitable for pouring at brunch. And a “horchata” daiquiri is an appropriate type of drink to serve during a resurrection narrative.
I’m not a fan of serving cocktails that taste bad but look good. I also think the drinks I serve should at least look decent, although really, really, really good drinks should taste great and also look somewhat decent.

1. Lavender Lemonade Spritzer
For a delightful drink that not only quenches but also refreshes, one might consider a Lavender Lemonade Spritzer. Combining it with a drink that boasts floral notes from culinary lavender, one might erringly think of a drink that is more Virginia Woolf than Beyoncé.
And yet that is exactly what (via recipe) one is instructed to do when one thinks of a drink featuring floral notes.
Ingredients
1 cup water
1/4 cup dried culinary lavender
1 cup sugar
1 cup freshly squeezed lemon juice
2 cups club soda
Ice cubes
Lemon slices and lavender sprigs for garnish
Instructions
1. In a small saucepan, combine the water and dried culinary lavender. Bring to a boil, then remove from heat and allow to steep for about 10 minutes. Strain the lavender and return the infused water to the saucepan.
2. To the water infused with lavender, add sugar. Heat gently, stirring until the sugar dissolves completely to create a lavender syrup. Allow this mixture to cool to room temperature.
3. A large pitcher is the vessel of choice for bringing together the cooled lavender syrup and the freshly squeezed lemon juice. Stir this mixture well. Then introduce the club soda to the combination.
4. Pour over ice, garnishing each glass with a lemon slice and a sprig of lavender for a festive touch.
2. Carrot Mimosa

4. Peeps Mojito

For garnishes, you may either use a twist of orange peel or a whole vanilla bean—if you’re feeling really fancy—as a makeshift swizzle stick.

2 dashes Angostura bitters
1 strip of orange peel

Vanilla bean pod, for garnish (optional)
Instructions
1. In a mixing glass, combine bourbon, vanilla bean simple syrup, and Angostura bitters.
2. Halfway fill a glass with ice cubes and stir the mixture until well-chilled, about 30 seconds.
3. Pour the cocktail into a rocks glass over a large ice cube.
4. Bend the strip of orange peel over the glass to extract its oils, then add it to the drink as a garnish. For extra aroma and visual appeal, you can also garnish with a vanilla bean pod.
