I can’t get enough of this French Onion Chicken, with juicy skillet-seared chicken, buttery caramelized onion gravy, and a blanket of melted cheese. It’s the kind of 30-minute dinner that looks and feels restaurant-worthy with almost no fuss.

I’m ridiculously into this French Onion Chicken because it gives me all the best parts of French onion soup without asking me to pretend soup is dinner. The yellow onions get rich and jammy, the gravy turns buttery and savory, and the Gruyere melts into that stretchy, salty layer I will steal from the skillet.

And the chicken? Juicy, saucy, covered in everything I want on a weeknight plate.

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
  • 1/2 cup dry white wine (or extra broth if you prefer no alcohol)
  • 1 cup beef broth or low sodium chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 cup Gruyere cheese, grated
  • 1/4 cup Parmesan cheese, grated
  • 2 tablespoons chopped fresh parsley for garnish (optional)

How to Make this

1. Pat chicken dry, season with salt and pepper, then dredge lightly in flour, shaking off excess.

2. In a large ovenproof skillet over medium heat, melt butter with olive oil until foaming. Add chicken and brown 3 to 4 minutes per side until golden; transfer to a plate.

3. Add sliced onions to the skillet and cook over medium low heat, stirring occasionally, until deeply golden and caramelized about 12 minutes.

4. Stir in minced garlic and thyme and cook 30 seconds until fragrant.

5. Pour in white wine to deglaze the pan, scraping up browned bits, and let the wine reduce by half about 2 minutes.

6. Add beef or chicken broth and Worcestershire sauce, stir and bring to a gentle simmer.
