I can never resist a recipe that lands golden, shatteringly crisp, and loaded with bold flavor in every bite. This is the kind of crunch that makes one serving feel dangerously optimistic.

I’m obsessed with these Fried Chicken Street Corn Tacos because they hit every craving I have at once: crispy, juicy, creamy, tangy, spicy, messy. The fried chicken brings that loud crunch I want, while the street corn piles on smoky sweetness and salty bite.

But the real troublemaker is the jalapeño lime ranch. I could put it on basically everything and still want more.

And tucked into corn tortillas? Dangerous.

Every bite has crackly edges, saucy drips, bright lime, and that just-one-more-taco energy. No polite little dinner here.

Just bold, crunchy tacos that disappear way too fast for me, always.

Ingredients

  • Chicken thighs stay juicy, even after frying.

    That’s the taco backbone.

  • Buttermilk makes the chicken tender and gives the coating something to cling to.
  • Hot sauce adds a little kick without turning dinner into a dare.
  • Flour and cornstarch bring that crunchy, craggy fried chicken bite we all want.
  • Smoked paprika, garlic, cumin, and pepper make the coating taste seasoned, not plain.
  • Corn tortillas keep things sturdy, cozy, and very street-taco friendly.
  • Charred corn adds sweetness, texture, and that messy-good street corn vibe.
  • Butter helps the corn get glossy, rich, and a little irresistible.
  • Cotija brings salty, crumbly magic.

    Basically, don’t skip it.

  • Cilantro and lime keep the tacos bright, fresh, and not too heavy.
  • Jalapeño lime ranch is creamy, tangy, and a little spicy.
  • Plus, mayo and sour cream make the sauce smooth enough to drizzle everywhere.

Ingredient Quantities

  • 1 1/2 pounds boneless skinless chicken thighs, cut into strips
  • 1 cup buttermilk
  • 2 tablespoons hot sauce
  • 1 teaspoon kosher salt, divided
  • 1 teaspoon black pepper, divided
  • 2 teaspoons garlic powder, divided
  • 2 teaspoons smoked paprika, divided
  • 1 cup all purpose flour
  • 1/2 cup cornstarch
  • 1/2 teaspoon ground cumin
  • 2 cups vegetable oil for frying
  • 8 small corn tortillas
  • 2 cups corn kernels, fresh or frozen
  • 2 tablespoons unsalted butter
  • 1 teaspoon chili powder
  • 1/3 cup crumbled cotija cheese
  • 1/4 cup chopped fresh cilantro, plus more for garnish
  • 2 limes, cut into wedges
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup buttermilk
  • 1 small jalapeño, seeded and finely chopped
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon salt for ranch
  • 1/4 teaspoon garlic powder for ranch

How to Make this

1. Whisk together 1 cup buttermilk, 2 tablespoons hot sauce, 1/2 teaspoon kosher salt, 1/2 teaspoon black pepper, 1 teaspoon garlic powder, and 1 teaspoon smoked paprika in a bowl; add 1 1/2 pounds chicken thigh strips, toss to coat, and refrigerate 20 to 30 minutes.

2. In a shallow bowl combine 1 cup all purpose flour, 1/2 cup cornstarch, 1/2 teaspoon ground cumin, the remaining 1/2 teaspoon kosher salt, 1/2 teaspoon black pepper, 1 teaspoon garlic powder, and 1 teaspoon smoked paprika.

3. Heat 2 cups vegetable oil in a heavy skillet or Dutch oven to 350°F or until a small piece of bread sizzles and browns in about 30 seconds.

4. Remove chicken from marinade, let excess drip off, dredge strips in the flour mixture, pressing to adhere, and fry in batches 3 to 5 minutes per batch until golden brown and cooked through; drain on a paper towel lined rack.

5. While chicken fries, melt 2 tablespoons unsalted butter in a skillet over medium heat, add 2 cups corn kernels and 1 teaspoon chili powder, season with a pinch of salt, and cook until corn is slightly charred and heated through about 5 to 7 minutes.

6. Make the jalapeño lime ranch by whisking 1/2 cup mayonnaise, 1/4 cup sour cream, 1/4 cup buttermilk, 1 small seeded finely chopped jalapeño, 1 tablespoon fresh lime juice, 1/2 teaspoon salt for ranch, 1/4 teaspoon garlic powder for ranch, and 1/4 cup chopped fresh cilantro until smooth; taste and adjust seasoning.

7. Warm 8 small corn tortillas in a dry skillet or wrapped in a towel in the oven until pliable.

8. Assemble tacos by placing a few pieces of fried chicken on each tortilla, topping with a spoonful of the charred corn, a drizzle or dollop of jalapeño lime ranch, and a sprinkle of 1/3 cup crumbled cotija cheese.

9. Garnish with additional chopped fresh cilantro and lime wedges, and serve immediately while chicken is hot and crunchy.

Pro Tips

1. For crispier chicken, pat the strips almost dry before dredging so the coating sticks without becoming gummy. Let them rest on a wire rack for 5 minutes after coating so the crust sets before frying.

2. Keep oil temperature steady around 350°F. If it drops too low the breading will absorb oil and get greasy; if it spikes the exterior will brown too fast. Work in small batches and use a thermometer.

3. Boost corn flavor by adding a little lime zest and a splash of soy or Worcestershire sauce while it chars. That bright umami lift makes the corn sing against the rich fried chicken.

4. Make the jalapeño lime ranch a few hours ahead and chill it. The flavors meld and the heat from the jalapeño becomes more balanced. If you want more kick, reserve some jalapeño seeds and stir in a pinch at the end.

5. Warm tortillas until pliable but not crispy, then keep them covered in a clean towel to stay soft. For easier eating, slightly overlap chicken pieces and use a squeeze of lime right before serving to cut through the richness.
