I’m obsessed with this Greek Yogurt Marinated Chicken because it hits that rare sweet spot: tangy, juicy, a little smoky, and ridiculously satisfying. I love how the Greek yogurt gives every bite that tender, almost silky texture without making the chicken feel heavy.

The lemon juice keeps it bright and sharp, which is exactly why I keep craving it on repeat. And that grilled edge?

I could pick at those charred bits straight off the plate. No polite dinner behavior here.

Just juicy chicken, big flavor, and the kind of meal I happily eat cold from the fridge later too.

  • Chicken thighs stay juicy and forgiving, while breasts keep things leaner and lighter.
  • Greek yogurt makes the marinade creamy and helps tenderize without tasting heavy.
  • Lemon juice adds that bright, fresh kick you’ll notice right away.
  • Lemon zest brings extra citrus flavor without making the chicken too tangy.
  • Olive oil helps everything coat the chicken and keeps it from drying out.
  • Garlic gives the marinade that bold, cozy flavor everyone loves.
  • Kosher salt wakes everything up.

    Basically, don’t skip it.

  • Black pepper adds a little bite without taking over the whole dish.
  • Paprika brings color, warmth, and a tiny smoky-sweet vibe.
  • Cumin adds earthy depth, making the chicken taste extra savory.
  • Oregano gives it that classic Greek-style, herby flavor.
  • Honey or maple syrup balances the tang.

    Plus, it helps browning.

  • Red pepper flakes add gentle heat if you like a little kick.
  • Fresh parsley or cilantro makes it feel bright, fresh, and finished.

Ingredient Quantities

  • 1 1/2 to 2 pounds boneless skinless chicken thighs or breasts
  • 1 cup plain Greek yogurt (full fat preferred)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon smoked or sweet paprika
  • 1/2 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon honey or maple syrup (optional, for balance)
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 2 tablespoons chopped fresh parsley or cilantro for garnish

How to Make this

1. In a bowl whisk together Greek yogurt, lemon juice, lemon zest, olive oil, minced garlic, salt, pepper, paprika, cumin, oregano, honey or maple syrup if using, and red pepper flakes if using until smooth.

2. Place chicken thighs or breasts in a large resealable bag or shallow dish and pour the yogurt marinade over the chicken, turning to coat each piece thoroughly.

3. Seal the bag or cover the dish and refrigerate at least 1 hour and up to 8 hours for best flavor and tenderness.

4. Remove chicken from the fridge 20 to 30 minutes before cooking to come closer to room temperature; discard excess marinade.

5. Preheat grill or grill pan to medium high and oil the grates or pan lightly to prevent sticking.

6. Grill chicken 5 to 7 minutes per side for thighs or 6 to 8 minutes per side for breasts, or until internal temperature reaches 165°F and the exterior is nicely charred and caramelized.

7. If using a hot oven instead, preheat to 425°F and bake chicken on a rimmed baking sheet 18 to 22 minutes until cooked through, finishing under the broiler 1 to 2 minutes for color if desired.

8. Transfer chicken to a cutting board and let rest 5 minutes to redistribute juices.

9. Slice or serve whole and sprinkle with chopped fresh parsley or cilantro for garnish.

FAQ

Greek Yogurt Marinated Chicken Recipe Substitutions and Variations

  • Plain Greek yogurt: use plain whole-milk yogurt or strained labneh for similar creaminess and tang; for dairy-free, use unsweetened plain coconut yogurt, noting a slight coconut flavor.
  • Fresh lemon juice: use 2 tablespoons white wine vinegar or apple cider vinegar for brightness, or 2 tablespoons plain yogurt for mild tang without added acidity.
  • Extra virgin olive oil: use avocado oil or light olive oil for neutral flavor and high-heat stability; for a nuttier note use walnut oil in dressings or low-heat cooking.
  • Honey or maple syrup: use agave nectar or 1 teaspoon granulated sugar to balance acidity; for a savory option omit sweetener and add a pinch more salt or a splash of balsamic vinegar.

Pro Tips

1. Before you pour the marinade over the chicken, scoop out and reserve a few spoonfuls to use as a sauce or drizzle after cooking. That way you get that fresh flavor without risking cross contamination.

2. Pat the chicken dry with paper towels just before it hits the grill or pan. A drier surface browns and chars much better, giving you better color and more flavor.

3. Use an instant read thermometer and pull the chicken at about 160 to 162°F, then let it rest 5 minutes. Carryover heat will bring it to a safe 165°F while keeping the meat juicier than if you cook it to 165°F on the heat.

4. For extra char without drying out, sear over high heat for a minute or two per side for color, then move to a cooler part of the grill or lower the heat to finish cooking gently. If using the oven, broil only at the end for the last 1 to 2 minutes to add caramelization.
