I make this Honey Garlic Chicken more nights than I should because its fast and somehow never boring. With boneless skinless chicken thighs and a glossy honey glaze the whole plate wakes up.

Ingredient Quantities

  • 1.5 lb (about 700 g) boneless skinless chicken thighs
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/3 cup (80 ml) low sodium soy sauce
  • 1/3 cup (113 g) honey
  • 1 tbsp rice vinegar
  • 4 garlic cloves, minced
  • 1 tbsp vegetable or canola oil
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tsp toasted sesame oil optional
  • 2 green onions
  • 1 tsp sesame seeds optional

How to Make this

1. Pat the chicken thighs dry, cut into 1 to 1 1/2 inch pieces, season with the kosher salt and black pepper.

2. In a bowl whisk together the soy sauce, honey, rice vinegar and minced garlic (add the toasted sesame oil now if using). You can let the chicken sit in some of this for 10-30 minutes if you want more flavor but it will be fine without marinating.

3. Heat the vegetable oil in a large skillet over medium-high heat. When it’s hot but not smoking, add the chicken in a single layer. Don’t overcrowd the pan or the chicken will steam instead of browning.

4. Brown the chicken, stirring occasionally, about 4-6 minutes until pieces are golden and mostly cooked through. Work in batches if needed and keep the browned pieces on the side.

5. Pour the honey soy mixture into the pan, scrape up any browned bits from the bottom with a spatula, and bring to a simmer. Let it bubble for 2-3 minutes so the flavors meld.

6. Whisk the cornstarch with 2 tablespoons water until smooth to make a slurry.

7. Slowly stir the slurry into the simmering sauce, cook 1-2 minutes more until the sauce thickens and becomes glossy and coats the chicken. If it gets too thick, add a splash of water.

8. Return any reserved chicken to the pan and heat through for another minute or two to make sure everything is hot and the chicken reaches 165°F internally.

9. Taste and adjust if needed, then finish with sliced green onions and a sprinkle of sesame seeds. Serve over rice or veggies.
