  • Mahi Mahi fillets (about 1 lb)
  • Fresh orange juice (1/2 cup)
  • Lime juice (1/4 cup)
  • Olive oil (2 tbsp)
  • Salt and pepper to taste
  • Diced pineapple (1/2 cup)
  • Chopped fresh cilantro (1/4 cup)

Instructions

1. Preheat your grill to medium high and season the fillets with salt, pepper, and a little garlic powder if you like.

2. Mix the orange juice, lime juice and olive oil in a bowl, then brush both sides of the fish with the marinade.

3. Grill your mahi mahi for about 4-5 minutes on each side till it is opaque and flakes easily.

Ingredients

  • 4 mahi mahi fillets
  • 2 tablespoons red curry paste
  • 1 can (14 oz) coconut milk
  • 1 small onion, sliced
  • 1 bell pepper, sliced
  • 1 tablespoon fish sauce
  • Juice of 1 lime

Instructions

1. First, heat a large skillet over medium heat and add a little bit of oil. Season your mahi mahi with salt and pepper and sear them for about 3 to 4 minutes on each side until they get a nice brown color.

2. Next, push the fish to one side of the pan and toss in the red curry paste along with the sliced onion and bell pepper. Stir them around for like a minute so the flavors can mix a bit.

3. Then, pour in the coconut milk and add the fish sauce. Stir everything together and let it simmer for 3 to 4 minutes so the sauce thickens up a little.

4. Finally, carefully place the mahi mahi back into the pan if needed, squeeze the lime juice all over, and let it cook for another 5 minutes until the fish is fully cooked. Enjoy while it’s hot!

  • 2 mahi mahi fillets
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 3 tbsp pesto sauce
  • 1 large tomato, sliced
  • 4 slices fresh mozzarella

Instructions

  • 4 Mahi Mahi fillets
  • 1/2 cup chopped sun dried tomatoes
  • 1 cup fresh spinach leaves
  • 2 cloves garlic, minced
  • 1/4 cup chopped basil leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

1. Preheat your oven to 375°F and season the Mahi Mahi fillets with salt and pepper on both sides.

2. In a small bowl, mix together the sun dried tomatoes, spinach, garlic, and basil with olive oil.

3. Lay the fish flat and spoon the mixture along the center, then roll up the fillet and secure it with a toothpick.

I made this roasted red pepper coulis mahi mahi dish with pan-fried mahi mahi fillets, roasted red bell peppers, garlic, red onion, olive oil, fish broth and lemon juice. Its packed with bold flavor.

Ingredients

  • 4 mahi mahi fillets
  • 2 roasted red bell peppers (peeled and seeded)
  • 1 small red onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1/2 cup fish broth (or chicken broth if you dont have fish broth)
  • 1 tablespoon fresh lemon juice

Instructions

1. Season the mahi mahi fillets with salt, pepper and a bit of lemon juice then heat the olive oil in a pan until its warm and lightly fry the fish until its cooked thru.

2. In a separate pot, combine the roasted red bell peppers, chopped onion, garlic and fish broth then let it simmer for about 5 minutes so all the flavors mix togethor.

3. Puree the mixture in a blender until its smooth but still a bit chunky then adjust the seasoning to your taste.

4. Plate the mahi mahi fillets and drizzle the red pepper coulis on top then serve immediately while its got a nice fresh flavour.

11. Peri-Peri Flame Mahi Mahi

11. Peri-Peri Flame Mahi Mahi

I made Peri Peri Flame Mahi Mahi by marinating mahi mahi fillets in peri-peri sauce, olive oil, lemon juice and garlic then seasoning with smoked paprika and salt before grilling. Its a fiery seafood dish.

Ingredients

  • 2 Mahi Mahi fillets
  • 3 tbsp Peri-Peri sauce
  • 2 tbsp olive oil
  • 1 lemon, juiced
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • Salt to taste

Instructions

1. Pat the fish dry and then coat it with the olive oil, lemon juice, and minced garlic.

2. Rub the Peri-Peri sauce, smoked paprika, and a bit of salt all over the fillets and let it marinate for about 20 minutes.

3. Heat your grill to medium high flame and carefully place the fish on it.

4. Grill each side for around 4-5 minutes until its nicely charred and cooked through.

  • 4 mahi mahi fillets
  • 3 tablespoons olive oil
  • 1/4 cup fresh lemon juice
  • 1/4 cup chicken broth
  • 1/4 cup chopped fresh basil
  • 2 garlic cloves, minced

Instructions

1. Season the mahi mahi fillets with salt and pepper then heat the olive oil in a pan over medium high heat and sear the fish for about 3-4 minutes on each side.

  • 1 lb mahi mahi fillets, cut into chunks
  • 2 tbsp Thai red curry paste
  • 1 can coconut milk
  • 1 red bell pepper, sliced
  • 1 small onion, chopped
  • 1 tbsp fish sauce

Instructions

1. Heat a little oil in a pan and saut the onion until it gets soft then mix in the curry paste so it cooks for a few minutes.

2. Pour in the coconut milk and add fish sauce, then stir well and bring it to a small simmer.

3. Add the mahi mahi and red bell pepper, let it all cook gently for 8-10 minutes until the fish is cooked through but still tender.

4. Squeeze a bit of lime juice on top for a zesty finish and serve it with rice while it’s nice and hot.

I whipped up Avocado Tomatillo Salsa Mahi Mahi by searing mahi mahi in olive oil then topping it with diced tomatillos, avocado, red onion, lime juice, salt and pepper. Really simple yet satisfying.

Ingredients

  • 4 mahi mahi fillets
  • 2 tbsp olive oil
  • 3 tomatillos, husked and diced
  • 1 ripe avocado, diced
  • 1 small red onion, finely chopped
  • Juice of 1 lime

Instructions

1. Preheat your grill or skillet over medium heat. Season the fish with salt and pepper and drizzle with olive oil.

2. Cook the mahi mahi for about 3-4 minutes on each side till its easily flakey. Don’t overcook it, cuz it can get dry.

3. In a bowl, mix the tomatillos, avocado, red onion, and lime juice along with a pinch more salt and pepper, stir it well.

4. Serve the cooked fish topped off with the avocado tomatillo salsa and enjoy while it’s still hot.

17. Chimichurri Mahi Mahi Delight

I prepped 17. Chimichurri Mahi Mahi Delight by grillin mahi mahi fillets brushed with olive oil, salt n pepper then drizzled them with a sauce made of garlic, cilantro, parsley and red wine vinegar.

Ingredients

  • 2 Mahi Mahi fillets
  • 2 tbsp Olive oil
  • 2 Garlic cloves, minced
  • 1/4 cup Fresh cilantro, chopped
  • 1/4 cup Fresh parsley, chopped
  • 2 tbsp Red wine vinegar
  • Salt and pepper to taste

Instructions

1. Brush the fillets with olive oil and season them with salt and pepper.

2. Heat the grill or skillet over medium heat and cook the fillets for about 4-5 minutes on each side untill they flake easily.

3. In a bowl, mix the garlic, cilantro, parsley and red wine vinegar to make the chimichurri sauce.

4. Once the fish is ready, drizzle the sauce over it and serve while its still warm.
