I never knew chicken breast could be this juicy, flavorful, and downright irresistible straight from the oven. This simple baked version is the one I keep coming back to again and again.

I’m obsessed with this oven baked chicken breast because it actually tastes like something I want to eat, not sad meal-prep punishment. The chicken breasts come out juicy, savory, and full of flavor, with that little smoky kick from smoked paprika that makes every bite hit harder.

I love how the edges get slightly golden while the inside stays tender and clean-slicing, never rubbery or bland. And the leftovers?

I honestly look forward to them. But fresh from the oven is where this recipe really shows off.

Simple, reliable, seriously good chicken. No drama.

Just a plate I keep coming back to.

Ingredients

  • Chicken breasts keep it lean, filling, and easy for a weeknight dinner.
  • Olive oil helps the seasoning stick and keeps things from tasting dry.
  • Kosher salt wakes everything up without making the chicken taste salty.
  • Black pepper adds a tiny kick that feels simple but needed.
  • Garlic powder brings that cozy, savory flavor you’ll definitely notice.
  • Onion powder adds a mellow background flavor without chopping anything.
  • Smoked paprika gives color and a little backyard-grill vibe.
  • Dried oregano makes it taste herby, but not too fancy.
  • Dried thyme adds a warm, earthy note that works with chicken.
  • Lemon juice brightens it up, so it doesn’t feel heavy.
  • Butter makes it richer.

Plus, it helps the chicken feel juicy.

  • Broth or water adds moisture.

Basically, it’s backup against dry chicken.

Ingredient Quantities

  • 4 boneless skinless chicken breasts (about 1 1/2 to 2 pounds total)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon unsalted butter, melted (optional)
  • 2 tablespoons low sodium chicken broth or water (optional)

How to Make this

1. Preheat oven to 400°F (204°C). Lightly grease a baking dish or line it with foil or parchment.

2. Pat chicken breasts dry with paper towels and, if they vary in thickness, pound to an even thickness about 3/4 inch for even cooking.

3. In a small bowl whisk together olive oil, lemon juice, kosher salt, black pepper, garlic powder, onion powder, smoked paprika, dried oregano, and dried thyme.

4. Place chicken breasts in a shallow dish or zip top bag and pour the seasoning mixture over them, turning to coat evenly. Let sit at room temperature 10 to 15 minutes or refrigerate up to 2 hours for more flavor.

5. Arrange the chicken breasts in a single layer in the prepared baking dish. Pour any remaining marinade over the top.

6. If using butter and chicken broth or water, mix melted butter with the broth and drizzle it around the chicken in the dish to keep the edges moist.

7. Bake uncovered in the preheated oven 18 to 22 minutes, or until an instant read thermometer inserted into the thickest part of the breast reads 165°F (74°C).

8. If desired, spoon pan juices over the chicken once or twice during baking to keep the surface moist and flavorful.

9. Remove from oven and let the chicken rest 5 minutes before slicing or serving to allow juices to redistribute.

Equipment Needed

1. Oven (preheated to 400°F / 204°C)
2. Baking dish or sheet pan lined with foil or parchment
3. Meat mallet or rolling pin for pounding chicken to even thickness
4. Paper towels
5. Small mixing bowl
6. Whisk and measuring spoons
7. Shallow dish or resealable plastic bag for marinating
8. Tongs or a fork for handling the chicken
9. Instant read thermometer

FAQ

Preheat oven to 400°F. Bake 20 to 25 minutes for average size breasts, until internal temperature reaches 165°F (74°C).

Pound thicker ends to even thickness, pat dry, rub with oil and seasonings, and let rest 5 to 10 minutes after baking. Optionally brine in 1 tablespoon salt per cup water for 15 to 30 minutes before cooking.

Yes. Increase baking time to 30 to 40 minutes and check for 165°F internal temperature. Bone in pieces will take longer than boneless breasts.

Reheat covered in a 300°F oven for 10 to 15 minutes with a splash of broth or water, or slice and warm briefly in a skillet with a little oil or broth.

Yes. Swap smoked paprika for regular paprika or chili powder, oregano and thyme for Italian seasoning, or add lemon zest or a squeeze of orange for brightness.

Yes. Cool completely, then freeze in airtight containers or freezer bags for up to 3 months. Thaw overnight in the refrigerator before reheating or slicing.

Oven Baked Chicken Breast Recipe Substitutions and Variations

  • Olive oil: substitute avocado oil, canola oil, or melted coconut oil for similar cooking properties and mild flavor.
  • Kosher salt: substitute sea salt (use slightly less by volume) or fine table salt (use about half the volume; adjust to taste).
  • Smoked paprika: substitute regular sweet paprika plus a pinch of cayenne or a small pinch of ground chipotle for smoky heat, or use smoked sea salt to add smokiness.
  • Low sodium chicken broth or water: substitute vegetable broth, white wine diluted with water, or a splash of apple juice for a touch of sweetness and moisture.

Pro Tips

1. Bring the chicken to room temperature for 10 to 15 minutes before baking so it cooks more evenly and finishes at the same time.

2. Use an instant read thermometer and pull the breasts at 160 to 162°F. Tent with foil for 5 minutes while resting and carryover heat will bring them to the safe 165°F without drying out.

3. Pat the breasts very dry and pound to uniform thickness if needed. That shortens cook time and prevents the edges from drying while the center cooks through.

4. For extra flavor and moisture, sear the seasoned breasts in a hot skillet for 1 to 2 minutes per side until lightly golden, then finish in the oven. Alternatively, dot with butter or spoon reserved pan juices over them during the first half of baking.
