I’ve made a lot of chicken katsu, but this ultra crispy, juicy version with spicy Korean katsu sauce is the one I can’t stop thinking about. This is chicken katsu on crack, and it absolutely lives up to the name.

I’m fully obsessed with this Spicy Korean Chicken Katsu because it hits like fried chicken with an attitude problem. The crunch from panko breadcrumbs is loud, messy, and exactly what I want, while the chicken stays stupid juicy inside.

But the sauce is where I lose all self-control. Gochujang brings that spicy, tangy, slightly sweet punch that makes every bite feel borderline illegal.

I love the way the crispy coating soaks up just enough sauce without quitting on me. And yes, I will absolutely eat the extra pieces standing over the counter.

No shame. This one goes hard every time.

Ingredients

  • Chicken breasts keep it lean, filling, and perfect for soaking up that spicy sauce.
  • Salt and pepper make the chicken taste awake, not flat or boring.
  • Flour helps everything stick, so the crust doesn’t slide off.
  • Eggs are the glue that holds that crispy coating together.
  • Cornstarch adds extra crunch, and honestly, it’s a sneaky little win.
  • Panko gives you that loud, golden crunch you’ll crave again.
  • Neutral oil fries clean, so the chicken stays the star.
  • Gochujang brings sweet heat, deep flavor, and that classic Korean kick.
  • Ketchup makes the sauce glossy, tangy, and a little familiar.
  • Soy sauce adds salty depth without making things too heavy.
  • Rice vinegar cuts the richness and keeps each bite bright.
  • Honey or sugar balances the spice, because we’re not trying to suffer.
  • Sesame oil adds nutty warmth, just a little goes a long way.
  • Plus, cabbage, lemon, rice, scallions, and sesame make it feel like dinner.

Ingredient Quantities

  • 1 1/2 pounds boneless skinless chicken breasts (about 4), pounded to 1/2 inch thickness
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup all purpose flour
  • 2 large eggs, beaten
  • 2 tablespoons cornstarch
  • 2 cups panko breadcrumbs
  • 1 to 1 1/2 cups neutral oil for frying, such as vegetable or canola
  • 1/3 cup gochujang (Korean red chili paste)
  • 1/4 cup ketchup
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey or granulated sugar
  • 1 teaspoon toasted sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh grated ginger
  • 1 teaspoon gochugaru or Korean chili flakes, optional for extra heat
  • 2 to 3 tablespoons water to thin the sauce as needed
  • 1 teaspoon toasted sesame seeds for garnish
  • 2 tablespoons thinly sliced scallions for garnish
  • 1 small head green cabbage, finely shredded, for serving
  • 1 lemon, cut into wedges, for serving
  • Cooked steamed rice, for serving (about 2 to 3 cups)

How to Make this

1. Season the pounded chicken breasts on both sides with kosher salt and black pepper.

2. Set up a breading station with three shallow bowls: flour in the first, beaten eggs mixed with cornstarch in the second, and panko breadcrumbs in the third.

3. Dredge each chicken piece in flour, shake off excess, dip into the egg mixture until coated, then press firmly into panko to fully cover; repeat for all pieces and place on a tray.

4. Heat 1 to 1 1/2 cups neutral oil in a large skillet over medium heat until it reaches about 350 degrees F or a small piece of bread sizzles and browns in 45 to 60 seconds.

5. Fry the breaded chicken in batches, 3 to 4 minutes per side, until golden brown and an instant read thermometer registers 165 degrees F in the thickest part; transfer to a wire rack or paper towel lined plate to drain.

6. Meanwhile, make the spicy Korean katsu sauce by whisking together gochujang, ketchup, soy sauce, rice vinegar, honey or sugar, toasted sesame oil, minced garlic, grated ginger, and gochugaru if using; add 2 to 3 tablespoons water as needed to reach a saucy but pourable consistency.

7. Warm the sauce briefly in a small saucepan over low heat for 1 to 2 minutes to meld flavors, then remove from heat.

8. Thinly shred the green cabbage and divide among serving plates with steamed rice; slice the fried chicken into strips and arrange over the rice or cabbage.

9. Spoon or drizzle the spicy Korean katsu sauce over the chicken, sprinkle with toasted sesame seeds and sliced scallions, and serve with lemon wedges on the side.

FAQ

Spicy Korean Chicken Katsu Recipe Substitutions and Variations

  • Gochujang: Substitute 2 tbsp miso + 1 tbsp chili paste (sriracha or sambal oelek) + 1 tsp brown sugar or honey to mimic sweet, savory, spicy profile.
  • Panko breadcrumbs: Substitute crushed cornflakes or coarsely ground saltine crackers for similar crunch; or use regular breadcrumbs mixed with 2 tbsp melted butter for crispiness.
  • Cornstarch: Substitute an equal amount of arrowroot powder or potato starch for the same light coating and crisp frying results.
  • Honey or granulated sugar: Substitute maple syrup, agave nectar, or an equal amount of brown sugar for comparable sweetness and slight depth of flavor.

Pro Tips

1) Keep the oil steady and do not overcrowd the pan. Fry in batches so the oil temperature recovers quickly; crowded chicken cools the oil and gives greasy, soggy breading instead of a crisp crust.

2) For extra crunchy coating, press the panko firmly onto the wet chicken and let the breaded pieces rest 10 minutes on a tray before frying. That helps the crumbs adhere and hold up during cooking.

3) Add the cornstarch to the egg mixture to boost crispness and create a snappy texture where the breading meets the meat. If you want an even crisper result, fry once until golden, rest for a few minutes, then briefly refry at higher heat for 30 to 60 seconds.

4) Make the gochujang sauce ahead and taste for balance. If it feels too salty or intense, add a touch more honey or a squeeze of lemon to brighten it. Serve chicken off the heat on a wire rack so the crust stays crisp while you finish plating.
