How to Make this

3. Add the curry powder, turmeric, and cumin to the skillet and cook 30 seconds until fragrant, then stir in the tomato paste and cook 1 minute to deepen the flavor.

4. Transfer the onion-spice mixture to the crockpot with the chicken. Pour in the coconut milk and chicken broth, then add the fish sauce or soy sauce and the brown sugar or honey; stir to combine.

5. Add the sliced carrots and red bell pepper to the crockpot, season with salt and freshly ground black pepper to taste, and adjust curry powder if you want more heat or flavor.
