I’m obsessed with Butter Burgers because they hit hard in the best way: juicy beef, glossy edges, and that salty butter richness that makes every bite feel bigger than a regular burger. I love how the bun soaks up just enough without falling apart, especially when I use brioche buns and American cheese.

But the real pull is that crusty, beefy bite against the melted cheese. No fuss.

Just a burger that tastes like it means it. And I always want another one before I’m even done with the first, which is rude, honestly, but completely fair every time too.

  • 1 pound ground beef 80/20
  • 4 tablespoons unsalted butter, divided
  • 4 hamburger buns, preferably potato or brioche
  • 4 slices American cheese
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 small yellow onion, thinly sliced
  • 1 tablespoon neutral oil or melted butter for cooking the onion
  • 4 dill pickle slices optional
  • 4 lettuce leaves optional
  • 4 tomato slices optional

How to Make this

1. Divide the 1 pound ground beef into four equal portions and gently form into 3 1/2 to 4 inch patties, handling the meat as little as possible; season both sides with 1 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper.

2. Heat a large skillet or cast iron pan over medium heat and add 1 tablespoon neutral oil or melted butter; add the thinly sliced yellow onion and cook, stirring occasionally, until soft and lightly caramelized, about 8 to 10 minutes; remove onions and keep warm.

3. Wipe the pan if needed, then return to medium-high heat and add 2 tablespoons of the unsalted butter to melt.

4. Place the patties in the hot pan, pressing gently so they make even contact; cook undisturbed for about 3 minutes to develop a browned crust.

5. Flip the patties and immediately add the remaining 2 tablespoons unsalted butter to the pan; spoon the melted butter over the tops of the patties as they cook for another 2 to 3 minutes for medium doneness, or longer to your preferred doneness.

6. In the last 1 minute of cooking, place a slice of American cheese on each patty and cover the pan briefly to melt the cheese.

7. While the cheese melts, split the hamburger buns and toast them cut side down in the pan or under a broiler, buttering the cut sides if desired for extra richness.

8. Assemble burgers by placing a lettuce leaf and tomato slice on the bottom bun if using, add the buttered cheeseburger, top with the caramelized onions and a dill pickle slice if using, then finish with the top bun.

9. Serve immediately while hot so the buttered, juicy patty and melted cheese are at their best.
