I get juicy, crispy gyro meat with bold Greek flavor, all without a rotisserie or fancy tools. One bite and it feels like the best takeout gyro just came from my own kitchen.

I’m obsessed with this gyro meat because it hits that juicy, crispy edge I want without turning my kitchen into a restaurant project. I love the mix of ground lamb and ground beef with oregano, because it tastes bold, savory, and a little wild in the best way.

And those browned bits? The reason I keep sneaking pieces before dinner.

I pile it into pita, drag it through tzatziki, and pretend I have self-control. But I don’t.

This is the kind of meal I crave when takeout sounds boring and I want Greek flavor fast. No fuss.

Ingredient Quantities

  • 2 lb ground meat (1 lb ground lamb and 1 lb ground beef)
  • 1 small yellow onion, finely grated or processed (about 1/2 cup)
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/2 cup plain breadcrumbs
  • 2 tablespoons fresh parsley, finely chopped (or 2 teaspoons dried parsley)
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons cold water
  • 1 tablespoon olive oil (for cooking)

How to Make this

1. In a large bowl combine 2 lb ground meat, grated onion, minced garlic, 1 large egg, 1/2 cup breadcrumbs, 2 tbsp chopped parsley, 2 tsp dried oregano, 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp sweet paprika, 1/2 tsp ground cinnamon, 1 1/2 tsp kosher salt, 1 tsp black pepper, and 2 tbsp cold water.

2. Mix by hand or with a sturdy spatula until just combined and mixture is sticky and cohesive, about 1 to 2 minutes.

3. Transfer mixture to a sheet of plastic wrap and shape into a tight log about 2 to 3 inches in diameter, or press into a loaf pan for even shape.

4. Wrap tightly and refrigerate for at least 1 hour and up to 24 hours to firm up and let flavors meld.

5. Preheat oven to 375F if baking, or heat a large skillet over medium to medium high heat if pan frying; have 1 tbsp olive oil ready.

6. If baking, place loaf on a rimmed baking sheet and bake 25 to 30 minutes until internal temperature reaches 160F to 165F and juices run clear. If pan frying, slice log into 1/2 inch patties or very thin slices and cook in hot oiled skillet 3 to 4 minutes per side until browned and cooked through.

7. For extra crisp edges after baking, slice loaf thinly and sear slices in 1 tbsp olive oil in a hot skillet 1 to 2 minutes per side until browned.

8. Let cooked meat rest 5 minutes, then slice thinly against the grain for serving.

9. Serve warm in pita or flatbread with tzatziki, tomatoes, red onion, and chopped parsley.

10. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
