I’m obsessed with this cauliflower mac and cheese because it scratches that cheesy, creamy craving without dragging me into a pasta coma. The cauliflower stays tender with just enough bite, and sharp cheddar brings the kind of bold, salty flavor I actually want in mac and cheese.

It’s low-carb, gluten-free, and honestly way more satisfying than it has any right to be. But the best part?

It still tastes rich, messy, and totally craveable. No sad veggie swap situation here.

Just a bubbling dish of cauliflower mac and cheese that makes me go back for seconds. And maybe thirds.

Zero shame.

Ingredients

  • Cauliflower keeps it lighter, but still gives that cozy, mac-like bite.
  • Butter adds richness and helps the cheese sauce taste extra comfy.
  • Cream cheese makes everything thick, smooth, and a little tangy.
  • Heavy cream brings the silky sauce vibes you’ll want in every forkful.
  • Dijon mustard cuts the richness so it doesn’t taste flat.
  • Sharp cheddar is the big cheesy flavor, basically the main character here.
  • Mozzarella gives you that stretchy, melty pull everyone secretly loves.
  • Parmesan adds salty, nutty depth without trying too hard.
  • Garlic and onion powders make it taste seasoned, not plain.
  • Nutmeg is optional, but it’s sneaky good with creamy sauces.
  • Xanthan gum helps the sauce cling better, especially for keto-style cooking.
  • Plus, the crunchy topping gives serious baked mac energy.

Ingredient Quantities

  • 1 large head cauliflower (about 2 pounds), cut into florets
  • 2 tablespoons unsalted butter
  • 4 ounces cream cheese, softened
  • 1/2 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 2 cups sharp cheddar, shredded
  • 1 cup mozzarella, shredded
  • 1/2 cup grated Parmesan
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/8 to 1/4 teaspoon ground nutmeg, optional
  • 1/4 teaspoon xanthan gum, optional for extra creaminess
  • For topping optional: 1/2 cup crushed pork rinds or 1/4 cup almond flour plus 2 tablespoons melted butter

How to Make this

1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish or a similar casserole pan.

2. Bring a large pot of salted water to a boil. Add cauliflower florets and cook until just tender, about 6 to 8 minutes. Drain well and return to the pot.

3. Meanwhile, in a medium saucepan over medium-low heat, melt butter. Add cream cheese and stir until smooth. Whisk in heavy cream and Dijon mustard until combined and warm.

4. Remove sauce from heat and stir in shredded sharp cheddar, shredded mozzarella, and grated Parmesan until melted and smooth. Season with kosher salt, black pepper, garlic powder, onion powder, and nutmeg if using. If using xanthan gum, sprinkle it in now and whisk vigorously for 30 to 60 seconds to thicken.

5. Pour cheese sauce over the drained cauliflower in the pot and gently fold until all florets are evenly coated. Taste and adjust seasoning if needed.

6. Transfer the coated cauliflower to the prepared baking dish, spreading into an even layer.

7. For the optional crunchy topping, mix crushed pork rinds or almond flour with melted butter until combined, then sprinkle evenly over the cauliflower.

8. Bake uncovered for 18 to 22 minutes, until the top is bubbly and golden and the topping is crisp.

9. Let rest for 5 minutes before serving to allow the sauce to thicken slightly. Serve warm.

Equipment Needed

1. 9×13 inch baking dish or similar casserole pan
2. Large pot with lid for boiling cauliflower
3. Medium saucepan for cheese sauce
4. Colander for draining cauliflower
5. Silicone spatula or wooden spoon for folding and stirring
6. Whisk for smoothing sauce and incorporating xanthan gum
7. Cheese grater and measuring cups and spoons for ingredients and seasoning

    • Panko breadcrumbs with 2 tablespoons melted butter, for crunch
    • Crushed salted pretzels, for salty crunch

Pro Tips

1. Thoroughly dry the cauliflower after boiling. Any excess water will thin the sauce and make the bake runny, so give the florets a few minutes in a colander and pat them with a clean towel before tossing with the cheese sauce.

2. For deeper flavor, roast the florets at 425°F for 15 to 20 minutes until browned instead of boiling. They will hold their shape better and add a toasty note that plays beautifully with the cheeses.

3. If you use xanthan gum, sprinkle it slowly while whisking constantly and only use the smallest amount needed. Too much makes the sauce gummy; 1/4 teaspoon is usually more than enough for this quantity. Alternatively, let the sauce reduce a bit on low heat to thicken naturally.

4. Make the topping extra crunchy by toasting crushed pork rinds or almond flour in the oven for a few minutes before sprinkling them on. Tossing them with a little smoked paprika or grated Parmesan lifts the flavor.

5. Let the casserole rest before serving and store leftovers in a shallow container. Reheat gently in a 350°F oven until warmed through to keep the sauce creamy without separating.
