Slow Cooker Cream Cheese Crack Chicken Chili is the kind of recipe I cannot stop thinking about. I made it once, then somehow three more bowls happened before the week was over.

The cream cheese melts into the chili and makes every bite thick, tangy, and ridiculously rich, while ranch seasoning brings that salty, herby kick I keep chasing. And the chicken stays loaded with flavor instead of tasting like filler.

But the best part is the leftovers, because I swear they get bolder by the hour. Spoon after spoon.

I love how messy, creamy, cheesy, and addictive it is.

Ingredients

  • Chicken makes it hearty, filling, and basically the reason this eats like dinner.
  • Cream cheese turns everything rich, cozy, and a little dangerously good.
  • Ranch seasoning brings that salty, herby kick people always ask about.
  • Rotel adds tomatoes, chiles, and just enough zip without getting too spicy.
  • Black beans make it thicker, heartier, and sneak in some decent fiber.
  • Sweet corn gives little pops of sweetness that balance the creamy base.
  • Chicken broth keeps it saucy without making the chili feel too heavy.
  • Onion and garlic do the background work, making everything taste more homemade.
  • Chili powder and cumin bring warmth, depth, and that chili vibe.
  • Cheddar melts in sharp and gooey, because more cheese is usually correct.
  • Bacon adds salty crunch and makes the whole pot feel extra fun.
  • Plus, green onions, cilantro, avocado, or sour cream make bowls feel finished.

Ingredient Quantities

  • 2 pounds boneless skinless chicken breasts (about 3 medium)
  • 8 ounces cream cheese, softened
  • 1 (1 ounce) packet dry ranch seasoning mix
  • 1 (10 ounce) can diced tomatoes with green chiles (Rotel)
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can sweet corn, drained
  • 1 cup low sodium chicken broth
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste
  • 1 to 1 1/2 cups shredded sharp cheddar cheese, divided
  • 4 slices bacon, cooked and crumbled
  • Optional garnishes: sliced green onions, chopped cilantro, avocado, sour cream

How to Make this

1. Cook the bacon in a skillet until crisp, drain on paper towels, crumble, and set aside.

2. Place chicken breasts in the bottom of a 6 to 7 quart slow cooker.

3. Add chopped onion, minced garlic, diced tomatoes with green chiles, drained black beans, drained sweet corn, chili powder, ground cumin, ranch seasoning, salt, pepper, and chicken broth to the slow cooker.

4. Cut the cream cheese into chunks and nestle them among the other ingredients on top of the chicken.

5. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until chicken is cooked through and very tender.

6. Remove the chicken to a cutting board, shred with two forks, and return the shredded chicken to the slow cooker; stir thoroughly to combine and melt the cream cheese into the chili.

7. Stir in 1 cup of shredded sharp cheddar cheese until melted and well incorporated; taste and adjust seasoning as needed.

8. Sprinkle the remaining 1/2 to 1/2 cup of shredded cheddar cheese on top, then cover for 5 minutes to melt.

9. Stir in most of the crumbled bacon, reserve some for garnish, and serve hot with optional garnishes such as sliced green onions, chopped cilantro, diced avocado, and sour cream.

FAQ

Slow Cooker Cream Cheese Crack Chicken Chili Recipe Substitutions and Variations

  • Cream cheese: Full fat Greek yogurt for tang and lower fat, Neufchatel for a lighter texture, or 4 ounces mascarpone plus 4 ounces plain cream cheese for silkier richness.
  • Ranch seasoning packet: 1 tablespoon dried ranch seasoning blend, 1 tablespoon Italian seasoning plus 1 teaspoon garlic powder and 1 teaspoon onion powder, or 1 tablespoon sour cream powder for similar tang.
  • Black beans: Pinto beans for creamier texture, cannellini beans for mild flavor, or use 1 1/2 cups cooked brown lentils for a protein-rich, slightly different bite.
  • Bacon: Cooked diced ham for smoky pork flavor, turkey bacon for leaner option, smoked paprika plus a drizzle of olive oil for vegetarian smoky note, or omit and top with crunchy tortilla strips for texture.

Pro Tips

1. Use chicken thighs instead of breasts if you want richer, juicier meat; they shred beautifully and are more forgiving if your cook time runs long.

2. Soften the cream cheese at room temperature before adding it; that helps it melt into a silky sauce without leaving small lumps.

3. If you like more brightness, squeeze in a little fresh lime juice and stir it in at the end to lift the flavors and cut the richness.

4. For extra depth, brown the diced onion and garlic briefly in the bacon fat before adding to the cooker; it adds a toasty, caramelized note that makes the dish taste more layered.

5. Keep some of the bacon and cheddar aside for garnish so each bowl has a fresh crunchy and melty finish, and offer tortilla chips or warm tortillas for scooping.
