Recipes to Fit Every Palate
In my opinion, there are pot chili recipes to suit every palate. My cookbook collection has everything from the rich-with-ground-beef-and-tomatoes Classic Beef Chili Recipe that makes such a comforting pot of chili to the Turkey Chili Recipe, which offers a lighter twist.

Vegetarian enthusiasts will love the heaving-with-beans-and-veggies Vegetarian Chili Recipe (a must!). When you think of chili, you might think of the Creamy White Chicken Chili Recipe.

My family also loves the robust, no-bean Texas Chili Recipe, which is more like a meat stew than a pot of chili. Want convenience?

The Slow Cooker Chili Recipe lets you set it and forget it, while the Instant Pot Chili Recipe is perfect for quick cooking. Adventurous eaters might also enjoy the spicy kick of the Green Chili Recipe or the depth from a Chocolate Chili Recipe.

For a different kind of kick, there’s the Sweet Potato Chili Recipe and even a Pumpkin Chili Recipe.

15. Beer Chili Recipe

15. Beer Chili Recipe

Chili con Cerveza is a dish where ground beef, kidney beans, and dark beer come together to create a hearty meal that’s rich in protein and flavor. The recipe calls for diced tomatoes, which offer a slight sweetness, and you could almost—almost—describe the dish as having a sweet-and-sour element, given that it also calls for a generous amount of chili powder (to make it taste like chili, of course) and another spice that many people don’t associate with chili: cumin.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (28 ounces) diced tomatoes
  • 1 bottle (12 ounces) dark beer
  • 1 tablespoon chili powder
  • 1 teaspoon cumin

Instructions

1. In a large pot, over medium heat, warm the olive oil. To the pot, add the beef that has been ground, and cook until it achieves the color of brown and the aroma of savoriness, which takes about 5 minutes. As the meat cooks, it helps to use a spoon to break it up into smaller bits, which guarantees better browning and more beefy flavor in the final dish.

2. Add the kidney beans, the tomatoes, the beer, the chili powder, and the cumin. Put the whole thing on the stove and turn the heat up until it boils. Once it boils, reduce the heat and simmer for 40 minutes.

3. Cook the chili uncovered over medium heat for about 30 minutes, stirring occasionally, until it thickens. You can adjust the seasoning with salt and pepper to your taste, if you’d like.

A unique regional dish, Cincinnati Chili, has in its make-up ground beef, tomato sauce, and a blend of spices that sets it apart from any other chili. 4. Cook the mixture uncovered for a minimum of one hour, stirring now and then, until the chili has thickened.

18. No-Bean Chili Recipe

18. No-Bean Chili Recipe

No-Bean Chili Recipe

Hearty ground beef, aromatic onions, and garlicky goodness make this chili sing. They’re the stars of the show and when you think about it, the only things you really need to make a great-tasting pot of beef chili.

Beef, onions, and garlic. Everything else — seasonings, the sauce, the tomatoes — are just supporting characters.

Ingredients

  • 2 lbs ground beef
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 can (15 oz) tomato sauce
  • 1 can (1

    4.5 oz) diced tomatoes

Instructions

2. Chopped onion and minced garlic are added to the pot and cooked until the onion is translucent.

3. Combine the chili powder and cumin, cooking them for another minute until they are nice and aromatic.

4. Add the tomato sauce and diced tomatoes, and stir to combine. Bring the chili to a simmer, then reduce the heat and let it cook for about 30 minutes, stirring occasionally. Taste and adjust seasoning as desired before serving.

19. Three-Bean Chili Recipe

19. Three-Bean Chili Recipe

My recipe for Three-Bean Chili brings together black beans, kidney beans, and pinto beans, which partner well with diced tomatoes, olive oil, onion, and garlic, in a hearty and satisfying plant-based meal.

Ingredients

1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) pinto beans, drained and rinsed
1 can (1

4.5 oz) diced tomatoes

Instructions

1. In a large saucepan, medium heat the olive oil. Add to it the diced onion. Sauté the onion until it is translucent, which should take about 5 minutes.

2. In a pan, add minced garlic and keep on sautéing for another 1-2 minutes until the aroma wafts through your kitchen.

3. Incorporate all three varieties of beans and the diced tomatoes, with their juices, into the mixture.

4. Let the chili meld its flavors together by simmering it on low heat for 30–40 minutes. Stir it a couple of times during that time to recombine any ingredients that may have settled. You can’t do a whole lot of cooking on the stovetop and not have some aroma wafting through your place. Because of this, you should really take the time to adjust the seasoning just before serving. Salt and pepper are the essentials, but you might experiment with other additions if you’re feeling adventurous.

Hearty Tex-Mex Chili features ground beef, onion, garlic, diced tomatoes, and chili powder. It’s a flavorful one-pot recipe that makes an excellent cozy meal.

And the best part? Just a few simple ingredients make it totally doable!

Ingredients

2 tablespoons vegetable oil
1 pound ground beef
1 onion, chopped
2 cloves garlic, minced
1 can (1

4.5 ounces) diced tomatoes
2 tablespoons chili powder

Instructions

1. In a sizable Dutch oven, warm the vegetable oil over a medium flame. Add the ground beef, and cook until it browns, breaking it up with a spoon.

2. In the pot, add the chopped onion and minced garlic. Cook until the onion is clear.

3. Combine the diced tomatoes and chili powder, mixing them in thoroughly.

4. Lower the heat and let the chili bubble gently for 20-30 minutes, taking the time to stir it now and then. You want it to combine into something well and truly chili-like, with its flavor much intensified and some delightful nuance appearing, though you obviously want it to be well seasoned. When I taste it at this point, I want it to mostly chill if not completely chili-like, with any and all seasoning needing to be adjusted.
