I’m obsessed with these Crockpot Chicken Fajitas because they taste like I actually put in serious effort, even on a wildly chaotic day.   • 2 to 3 pounds boneless skinless chicken breasts
  • 3 medium bell peppers, mixed colors, sliced
  • 1 large yellow or white onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1/4 cup low sodium chicken broth
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika

  • 1/2 teaspoon freshly ground black pepper

How to Make this

1. In a small bowl whisk together chili powder, cumin, smoked paprika, dried oregano, kosher salt and black pepper.

2. Place chicken breasts in the crockpot and rub the spice mixture evenly over both sides of the chicken.

3. Add sliced bell peppers, sliced onion and minced garlic on top of and around the chicken.

4. In a measuring cup combine olive oil, fresh lime juice and low sodium chicken broth, then pour the mixture over the chicken and vegetables.

5. Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is very tender and reaches 165°F.

6. Remove the chicken to a cutting board and shred with two forks; skim any excess fat from the liquid in the crockpot if desired.

7. Return the shredded chicken to the crockpot, stir to combine with the peppers and onions, and let sit on LOW for 10 to 15 minutes to absorb flavors.

8. Stir in chopped fresh cilantro if using and adjust seasoning with additional salt or lime juice to taste.

9. Serve the chicken and peppers in warmed corn or low carb tortillas and offer lime wedges, sliced avocado, shredded cheese, sour cream and salsa as optional toppings.

10. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for longer storage.
