I’m obsessed with grilled steak because it’s bold, juicy, and straight to the point. No fuss, no fancy mood, just that smoky char and a center cooked exactly how I like it.

I love a ribeye on a gas grill, especially when the edges get a little crisp and the juices stay locked in. And the smell?

Ridiculous. I keep it simple with kosher salt because good steak does not need a whole personality makeover.

But when it hits the plate, sliced thick and dripping, I’m done. This is the steak I crave after one bite every single time, honestly.

Ingredient Quantities

  • 2 pounds steak (ribeye, New York strip, or sirloin), about 1 to 1 1/2 inches thick
  • 1 tablespoon kosher salt
  • 2 teaspoons freshly ground black pepper
  • 2 tablespoons olive oil or neutral oil (canola or vegetable)
  • 3 garlic cloves, smashed or minced
  • 2 tablespoons unsalted butter
  • 2 sprigs fresh rosemary or 2 sprigs fresh thyme
  • 1 tablespoon Worcestershire sauce (optional, for marinade)
  • 1 tablespoon low sodium soy sauce (optional, for marinade)
  • 1 teaspoon brown sugar (optional, for a touch of caramelization)
  • 1 tablespoon lemon juice or red wine vinegar (optional, for brightness)
  • Flaky finishing salt, for serving (optional)

How to Make this

1. Pat steaks dry with paper towels and let sit at room temperature 30 to 45 minutes while you prepare the grill and seasoning.

2. Mix 1 tablespoon kosher salt and 2 teaspoons freshly ground black pepper; rub evenly on both sides of the steaks.

3. In a small bowl combine 2 tablespoons olive oil, 3 smashed or minced garlic cloves, and if using add 1 tablespoon Worcestershire sauce, 1 tablespoon low sodium soy sauce, 1 teaspoon brown sugar, and 1 tablespoon lemon juice or red wine vinegar; brush or rub this mixture over the steaks for extra flavor.

4. Preheat a gas grill to high heat for direct searing, about 450 to 500°F, and oil the grates so steaks do not stick.

5. Sear steaks over direct high heat for 2 to 4 minutes per side to develop a crust, then move to indirect heat or reduce flame and continue cooking until an instant read thermometer reaches desired doneness: 125°F for rare, 135°F for medium rare, 145°F for medium, 155°F for medium well, 160°F for well done.

6. During the last 1 to 2 minutes of cooking, top each steak with 1/2 tablespoon unsalted butter and one sprig of fresh rosemary or thyme so the herbs and butter baste the steak as it finishes.

7. Remove steaks from the grill and tent loosely with foil; rest 5 to 10 minutes so juices redistribute and carryover cooking finishes gently.

8. Slice against the grain, sprinkle flaky finishing salt if desired, and serve immediately.
