I’m honestly obsessed with this baked chicken breast because it tastes way bigger than the effort behind it. The outside gets seasoned with garlic powder and smoked paprika, so every bite has that savory, slightly smoky thing I want with plain chicken but rarely get.

And the inside stays juicy, not sad or chalky. Big difference.

I love it for quick lunches, low-carb dinners, meal prep, random fridge raids, all of it. But what really gets me is how clean and bold it tastes without feeling heavy.

  • 4 boneless skinless chicken breasts, about 1 1/2 pounds total (4 to 6 ounces each)
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked or sweet paprika
  • 1/2 teaspoon dried oregano or dried thyme
  • 1/4 teaspoon crushed red pepper flakes, optional
  • Fresh lemon wedges for serving, optional

How to Make this

1. Preheat oven to 400 degrees F (205 degrees C) and line a baking sheet with foil or parchment paper.

2. Pat the chicken breasts dry with paper towels and place them on a cutting board.

3. In a small bowl combine olive oil, kosher salt, black pepper, garlic powder, onion powder, paprika, dried oregano or thyme, and crushed red pepper flakes if using.

4. Rub the spice mixture evenly over both sides of each chicken breast until coated.

5. Arrange the seasoned chicken breasts on the prepared baking sheet, leaving space between each piece.

6. Let the chicken sit at room temperature for 10 to 15 minutes if time allows to help the seasoning penetrate.

7. Bake in the preheated oven for 18 to 22 minutes, or until the internal temperature reaches 165 degrees F (74 degrees C) at the thickest part.

8. Remove the chicken from the oven and tent loosely with foil. Let rest for 5 minutes to lock in juices.

9. Slice or serve the chicken breasts whole with fresh lemon wedges for squeezing over the top if desired.

10. Store any leftovers in an airtight container in the refrigerator for up to 4 days.

3. Get a nice color by briefly searing the seasoned breasts in a hot skillet for 1 to 2 minutes per side before transferring to the oven. It adds flavor and a more appetizing appearance without much extra work.
