In this post, I share some of my favorite recipes that highlight the green bean. From the iconic Green Bean Casserole to the zesty Southern Flavored Green Beans, these dishes will rock your taste buds and elevate your dinner table any night of the week!

Instructions

1. The oven should be set to 350 degrees Fahrenheit (175 degrees Celsius) to preheat.

2. In a big mixing bowl, combine green beans, cream of mushroom soup, milk, soy sauce, and black pepper. Mix until everything is combined well.

3. Pay the mixture to a baking dish and bake in the preheated oven for 25 minutes.

4. After 25 minutes, stir the casserole, sprinkle the French fried onions over the top, and bake for an additional 5 minutes or until the onions are golden brown.

1. Start with the green beans. Wash them well and trim their ends. Remember: no stems.

4. Add the green beans to the skillet, season with salt and black pepper, and if you like, add some red pepper flakes. Sauté for 5-7 minutes until the beans are tender-crisp.

is an elegant dish in the French style that incorporates elements from the cuisines of many Mediterranean countries. In its traditional form, the classic side dish features tender green beans beautifully arranged on a platter and topped with toasted almonds, garlic, and a little lemon juice—an elegant dish indeed.

And yet it serves equally well as a surprise element in the Mediterranean-inspired main course.

Ingredients

1 pound fresh green beans, trimmed
1/2 cup sliced almonds
2 tablespoons unsalted butter
1 tablespoon olive oil
2 cloves garlic, minced
Salt and pepper to taste
1 tablespoon lemon juice

1. Take a sizable pot, fill it with water, and salt it generously. When the water is boiling, add the beans and cook them for 3-4 minutes. When you take them out, they should be bright green and just tender. Drain the beans and put them right into a bowl of ice water to stop the cooking. After a couple of minutes, or right away if you like, drain the beans again.

2. In a big frying pan, warm the butter and olive oil over medium heat. Introduce the almonds and toast them for 3 to 4 minutes, until they’re golden brown.

3. Sauté the minced garlic in the skillet for about 1 minute until fragrant. Then, add the blanched green beans, tossing to coat them in the buttery mixture. Season with salt, pepper, and lemon juice, then toss to combine, and serve warm.

Cherry tomatoes, halved
Red onion, thinly sliced
Feta cheese, crumbled

Instructions

1. Put a pot of salted water to the boil. Add the green beans and let them cook for about 3 minutes, until they are tender-crisp and bright green. Drain and quickly submerge in ice water to stop the cooking process. Drain again and pat the beans dry.

2. In a big basin, mix the green beans that have been blanched, the tomatoes that are so sweet, and the red onion.

3. In a tiny bowl, blend olive oil, lemon juice, salt, and pepper together well with a whisk. Dress the vegetable medley with the mixture and toss to coat.

4. Feta cheese, crumbled, should be folded in gently. The dish can be served either chilled or at room temperature.

1. In a large skillet or wok, over medium-high heat, heat the oil. When the oil is hot, add the minced garlic and stir-fry for about 30 seconds until it’s nice and fragrant.

2. Stir-fry the green beans for 5 to 7 minutes, or til they are tender-crisp.

3. Incorporate the soy sauce, sesame oil, and crushed red pepper flakes (if using). Stir well to coat the green beans evenly. Season with salt and pepper to taste, then serve hot.

A simple yet delectable side dish, roasted green beans are prepared from fresh green beans, olive oil, kosher salt, and black pepper. But the addition of minced garlic, and the judicious use of lemon juice and Parmesan cheese, gives this dish a unique and tasty twist.

1 pound fresh green beans, trimmed
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 cloves garlic, minced
1/4 cup grated Parmesan cheese
1 tablespoon lemon juice

1. Your oven should be heated to 425 °F (220 °C) beforehand.

2. In a big bowl, combine the green beans with olive oil, salt, pepper, and minced garlic. Toss until the coating is even.

3. Arrange the green beans in a single layer on a baking sheet.

4. Preheat the oven to the appropriate temperature. Roast your green beans for 15-20 minutes in this very hot oven. When they are done, they should be slightly browned and tender. Finish them by sprinkling Parmesan cheese and lemon juice on top for the much-needed umami and zing. Then serve!

7. Green Bean Amandine with Lemon

Lemon Green Bean Amandine is a brilliant side dish of fresh green beans, sliced almonds, and butter. It is livened up with lemon juice and zest and can gain added allure from optional garlic.

Ingredients

Fresh green beans
Sliced almonds
Unsalted butter
Lemon (for juice and zest)
Salt
Black pepper

Instructions

1. Place the green beans in salted boiling water for 3-4 minutes. Remove from the heat and transfer the beans to an ice bath to stop the cooking. Drain and set aside.

2. In a wide frying pan set over medium heat, melt the butter. Stir in the sliced almonds and toast them until they are a deep, rich shade of brown, about 2-3 minutes.

3. In the skillet, combine the drained green beans and almonds. Pour in the lemon juice and zest, and season with salt and pepper. If you’re using it, add the minced garlic now, and sauté for a minute with the beans before serving.

4. Serve warm the green bean amandine, if desired, with toasted almonds and perhaps some more lemon zest.

A dish that is both simple and elegant, French green beans fried with shallots, so to speak, was something I had never thought to attempt. Yet it was this too-basic recipe—turns out it’s kind of a classic; hence the presence of said shallots in my kitchen—that propelled me to finally make the irresistible green bean dish I had enjoyed at the Frenchie Wine Bar.*

Ingredients

Haricots verts (thin French green beans), 1 pound
Olive oil, 2 tablespoons
Shallots, thinly sliced, 2 large
Salt, to taste
Freshly ground black pepper, to taste
Lemon zest, 1 teaspoon (optional)
Fresh parsley, chopped, for garnish (optional)

Instructions

1. Fill a big pot with water, and salt it well. Bring the water to a rolling boil. Toss in the haricots verts and time them for 2 to 3 minutes. You want them to become bright green and tender-crisp. Drain them in a colander and then quickly transfer the beans to a bowl of ice water to stop the cooking process. Drain them again and set them aside.

2. In a big frying pan, warm the olive oil over medium heat. Toss in the sliced shallots and sauté for approximately 5 minutes, or thereabouts, until they reach a state of softness and translucency reminiscent of overcooked onions.

3. Add the drained haricots verts to the skillet with the shallots.Season with salt and freshly ground black pepper. Toss to combine and cook for an additional 2 minutes, until the beans are heated through.

4. (Optional) For an added hint of brightness, stir in the lemon zest. Before serving, top with some freshly chopped parsley. Serve warm.

9. Spicy Korean Green Beans

Korean Green Beans are a delicious side dish. Crisp green beans are combined with a savory sauce made with gochujang (a Korean chili paste), soy sauce, and sesame oil, then garnished with crunchy sesame seeds.

You can’t go wrong with adding these to your next dinner table.

Ingredients

  • 2 cups fresh green beans, trimmed
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon sesame seeds

Instructions

1. Immerse the green beans in boiling water for about 2 minutes, then drain them and immerse them in ice water to stop the cooking process. Drain and set aside.

2. A big skillet or wok over medium heat. Gochujang, soy sauce, sesame oil, rice vinegar, and minced garlic. Combine and mix in the skillet so that the result is a well-mixed and slightly thickened sauce.

3. Place the blanched green beans in the skillet, and sauce them until they are seethingly hot yet still bright green and tender-crisp.

4. Before serving, add sesame seeds for texture and flavor. Hot, this is a very spicy side dish.

10. Green Bean Shakshuka

Savory diced tomatoes, tender green beans, and a couple of pantry staples combine to make this super simple (yet oh-so-satisfying) one-pan meal. And can we talk about poaching eggs, for real?

You don’t have to be a ninja in the kitchen to pull off the culinary technique that is poaching an egg. In fact, it’s kind of the opposite.

You just have to keep the egg submerged in simmering water (or tomato broth, in this case) until it firms up. And the beautiful part is that these Shakshuka-style eggs are super forgiving.

You can go right on ahead and let them reach a stage of doneness that makes you question why anyone would ever eat a soft-cooked egg.

Ingredients

2 tablespoons olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 pound green beans, trimmed and halved
1 can (14 ounces) diced tomatoes
4 large eggs
Salt and pepper to taste

Instructions

1. In a large skillet, warm the olive oil over medium heat. Toss in the finely chopped onion and let it cook down until it’s soft and translucent. This should take about 5 minutes; you don’t want to rush. Then, add the minced garlic and let everything simmer for another minute.

2. Mix in the green beans and diced tomatoes. Add salt and pepper to taste. Cover and simmer for approximately 10-15 minutes, or until the green beans are tender.

3. Create four small indentations in the mixture and break an egg into each indentation. Put a lid on the skillet and cook until the eggs are set, about 5-7 minutes. Serve right away.

11. Green Beans with Walnut and Gorgonzola

11. Green Beans with Walnut and Gorgonzola

Green Beans with Walnut and Gorgonzola combines fresh green beans, toasted walnuts, and crumbled Gorgonzola cheese. A simple dressing of olive oil and red wine vinegar unites this dish.

Ingredients

1 pound fresh green beans, trimmed
1/2 cup walnuts, toasted and roughly chopped
3 ounces Gorgonzola cheese, crumbled
2 tablespoons olive oil
1 tablespoon red wine vinegar
Salt and pepper to taste

Instructions

1. Take a big pot of salted water and bring it to a rolling boil. Add the green beans and cook them in the rapidly boiling salted water for about 3-4 minutes, or until tender-crisp. Drain the beans and immediately immerse them in a bowl of ice water to stop any further cooking. Drain the beans again after about 1 minute, and then spread them out on a clean kitchen towel.

2. In a large bowl, combine the ready-to-eat green beans with the toasted walnuts.

3. In a small bowl, combine the olive oil and red wine vinegar. Whisk them together. Add salt and pepper to taste.

4. Dress the green beans and walnuts with the dressing, and toss gently to combine. Crumble the Gorgonzola cheese over the top before serving.

Green beans with lime and garlic cooked in olive oil make for such a vibrant side dish. In this recipe, the beans are cooked until just tender and then tossed with an abundance of sharp, zesty ingredients—garlic, fresh lime juice, salt, fresh ground black pepper, and lime zest—that await them in a bowl.

When you serve this dish, not only will you smell the divine odor of garlic and lime that envelops the beans, but you’ll probably also be overcome by the glorious sight of them.

Ingredients

Green beans, trimmed
Olive oil
Fresh lime juice
Garlic, minced
Salt
Black pepper
Lime zest

Instructions

1. A large skillet should be heated over medium-high heat, and then olive oil should be added.

2. Add the green beans to the skillet and cook, stirring occasionally, until they are tender and charred, about 5-7 minutes.

3. Put the minced garlic in the skillet with the green beans and cook for another minute until you can smell it. Minced garlic and green beans go together like peanut butter and jelly.

4. Take it off the heat and mix the green beans with freshly squeezed lime juice, salt, pepper, and lime zest. Serve right away.

13. Moroccan Spiced Green Beans

13. Moroccan Spiced Green Beans

Green beans dressed with Moroccan spices—cumin, coriander, and paprika—make a quick side dish that shines with flavor. Olive oil and minced garlic provide the baseline for a dish that melds rich, vibrant, and well-defined tastes.

Seriously, your kitchen will smell amazing. If you can find harissa—a North African hot chili pepper paste—you should use it; if you can’t, almost any hot sauce will suffice.

Ingredients

Green beans, trimmed and washed
Olive oil
Garlic, minced
Ground cumin
Ground coriander
Paprika
Salt and pepper to taste

Instructions

1. In a large skillet, heat olive oil over medium heat. To the oil, add minced garlic and sauté until it gives off a wonderful aroma, which should take about 1 minute.

2. In the skillet, add the cumin, coriander, and paprika, stirring constantly for about 30 seconds to boost the spices’ fragrance.

3. Toss the green beans in the spiced oil and add them to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the tender yet crisp beans reach the optimal green-bean state.

4. Add salt and pepper to taste, make it warm and present it.
