I’m obsessed with oven baked chicken thighs because they bring big dinner energy without trying too hard. The skin gets crisp, the meat stays ridiculously juicy, and every bite has that savory, garlicky punch I want after a long day.

I love using bone-in skin-on chicken thighs because they taste richer and feel way more satisfying than plain chicken breasts. A little smoked paprika gives them that bold, slightly smoky edge I crave.

  • 6 bone-in skin-on chicken thighs (about 2.5 to 3 pounds)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt

How to Make this

3. In a large bowl combine olive oil, kosher salt, black pepper, garlic powder, onion powder, smoked paprika, baking powder, and dried thyme. Stir to form a paste.

4. Add the chicken thighs to the bowl and rub the seasoning mixture all over each piece, making sure to get under the skin where possible. Zest the lemon and sprinkle the zest over the thighs.

5. Arrange the thighs skin side up on the rack or directly on the lined baking sheet, spacing them so air can circulate.

6. Roast in the preheated oven for 35 to 45 minutes, or until the skin is golden and crispy and the internal temperature at the thickest part reads 165°F (74°C).

7. If you want extra color, place under the broiler for 1 to 3 minutes while watching closely so the skin does not burn.

8. Remove from oven, squeeze lemon juice over the hot thighs, and let rest for 5 minutes. Sprinkle with chopped fresh parsley if using, then serve.

3) Use the baking powder carefully. It helps crisp the skin, but too much gives a metallic aftertaste. Stick to the small amount listed and make sure it is fully mixed into the oil so it distributes evenly.
