How to Make this

1. Preheat the air fryer to 400 F (200 C).

2. Cut 1 1/2 pounds boneless skinless chicken breasts into 1 inch pieces and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

3. Lightly toss the chicken with 1 tablespoon neutral oil or spray the pieces with cooking spray to help browning.

4. Arrange the chicken in a single layer in the air fryer basket and cook 10 to 12 minutes, shaking or turning halfway through, until pieces reach 165 F and are golden.

5. While the chicken cooks, make the sauce: in a small saucepan combine 1/2 cup natural creamy peanut butter, 3 tablespoons low sodium soy sauce, 2 tablespoons honey, 1 tablespoon rice vinegar, 1 teaspoon toasted sesame oil, 2 cloves minced garlic, 1 teaspoon grated fresh ginger (or 1/2 teaspoon ground ginger), and 1 teaspoon sriracha if using; warm gently and whisk until smooth.

6. In a small bowl mix 1 tablespoon cornstarch with 2 tablespoons water to make a slurry.
