  • 1 whole chicken, 3 to 4 pounds
  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon paprika (optional, for color)
  • 1 lemon, halved
  • 4 garlic cloves, smashed
  • 4 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 1 large onion, quartered
  • 3 medium carrots, cut into 2 inch pieces
  • 3 medium potatoes, cut into chunks
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

How to Make this

1. Preheat oven to 425°F (220°C). Pat the chicken dry inside and out with paper towels.

2. In a small bowl, mix softened butter, kosher salt, black pepper, and paprika if using.

3. Gently loosen the skin over the breasts with your fingers and spread about two thirds of the butter mixture under the skin, rubbing the rest over the outside of the chicken.

4. Stuff the cavity with the halved lemon, smashed garlic cloves, thyme sprigs, and rosemary sprigs. Tie the legs together with kitchen twine and tuck the wing tips under the bird.

5. In a roasting pan or rimmed baking sheet, toss the onion quarters, carrot pieces, and potato chunks with olive oil and a pinch of salt and pepper. Arrange vegetables in an even layer.

6. Place the chicken on top of the vegetables, breast side up, so the vegetables act as a rack and will roast in the chicken juices.

7. Roast in the preheated oven for about 60 to 75 minutes for a 3 to 4 pound chicken, or until an instant read thermometer inserted into the thickest part of the thigh registers 165°F and the juices run clear.

8. If the skin is browning too quickly, tent loosely with foil for the last 10 to 15 minutes. Baste once or twice with pan juices if desired.

9. Remove the chicken from the oven and transfer to a cutting board. Let rest for 10 to 15 minutes before carving to keep the meat juicy.

10. Carve and serve with the roasted vegetables, spooning pan juices over the chicken and garnishing with chopped fresh parsley if desired.
