Tilapia with Pineapple and Jalapeño is a sensational dish featuring the mild flavor of tilapia fillets set off by a fruity, spicy topping of pineapple and jalapeño. This quick-cooking fish makes for a good weeknight meal, and it pairs nicely with brown rice and tender sautéed vegetables.

Ingredients

Tilapia fillets (about 4 fillets)
Fresh pineapple, diced (1 cup)
Jalapeño peppers, minced (1-2, depending on heat preference)
Lime juice (2 tablespoons)
Olive oil (2 tablespoons)
Salt (to taste)
Black pepper (to taste)

Instructions

1. Heat your oven to 375°F (190°C).

2. In a little dish, mix the finely chopped pineapple, jalapeño, olive oil, salt, and lime juice.

3. Lay the tilapia fillets on a parchment paper-lined baking sheet and spoon the pineapple and jalapeño mixture over the top of each fillet evenly, ensuring each one is coated generously.

4. Place in the preheated oven. Allow to bake for 15-20 minutes, or until the fish turns opaque. The fish should separate easily when poked with a fork. Immediate serving is recommended.

Ingredients

4 tilapia fillets
2 tablespoons sriracha sauce
3 tablespoons fresh lime juice
2 tablespoons olive oil
1 tablespoon honey
2 cloves garlic, minced
Salt and pepper to taste

Instructions

1. Mix together the sriracha sauce, lime juice, olive oil, honey, and minced garlic to create the marinade.

2. Tilapia fillets require seasoning on both sides before they are placed in a shallow dish. The seasoning is straightforward: salt and pepper work well, or you can use adobo or your favorite fish seasoning. Then you place the fillets in the dish and pour the marinade over them. Marinades can be anything from a simple citrus juice or vinegar blend to a rich soy sauce and sesame oil mixture. The citrus or vinegar penetrates the fish muscle more deeply than oil, allowing it to stay moist and ensuring that the flavor of the marinade comes through.

3. Prepare a grill or skillet to reach a medium-high heat. When at temperature, place the marinated tilapia fillets upon it and allow them to cook for 3-4 minutes on one side. Flip the fish over and repeat for another 3-4 minutes. Both sides should be seared and the fish should be opaque and flaky by the end.
