Zest of 1 lemon
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 cup dried cranberries
1/2 cup chopped dried apricots

Instructions

1. Preheat the oven to 350°F (175°C) and line the baking sheet with parchment paper.

2. In a big bowl, combine the oats, almonds, pecans, sunflower seeds, sesame seeds, and coconut flakes.

3. In a separate bowl, whisk together the melted coconut oil, maple syrup, orange zest, lemon zest, salt, vanilla and cinnamon.

4. Add the wet mixture to the dry and stir it together until everything is uniformly moistened.

5. Spread the mixture on the prepared baking sheet and bake 25-30 minutes, stirring halfway through, until golden brown.

6. Cool it and stir in the dried cranberries and apricots before storing in a jar.

I love Spiced Pear and Almond Granola. The fruitiness of the dried pears blend smoothly with the crunch of the rolled oats and sliced almonds.

The spices – cinnamon, ginger and nutmeg – bring warmth to the dish, which could become a mainstay of morning rituals. 

Ingredients

2 cups rolled oats
1 cup sliced almonds
1/2 cup dried pears, chopped
1/4 cup unsweetened shredded coconut
1/4 cup honey or maple syrup
1/4 cup coconut oil, melted
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 teaspoon vanilla extract

Instructions

1. Heat your oven to 325°F (165°C) and line a baking sheet with parchment paper.

2. Combine the oats, almonds, dried pears, coconut, cinnamon, ginger, nutmeg and salt in a large bowl.

3. Meanwhile mix the honey (or maple syrup), coconut oil and vanilla extract in another small bowl.

4. Drizzle the wet mixture over the dry mixture, then gently stir until the oat mixture is evenly coated.

5. Spread the granola mixture out evenly on the prepared baking sheet and bake for 25-30 minutes, stirring halfway through, until the granola is golden brown and fragrant.

6. Wait for the granola to cool completely on the sheet before storing it in an air-tight container.
