I am zealous about attempting various cookie recipes, each of which bestows its own unique twist to the classic sweet. They have the recipe for the forever-charming chocolate chip cookie, and the one for the shortbread cookies infused with lavender, the species of ubiquitous herb I so adore.

And then there are the ube crinkle cookies. When I attempt them, though, I can suffice to say that my taste buds are reveling in the anticipated twist from the crinkles themselves, the surprise of texture and color that comes with every batch.

1. Chocolate Chip Cookies

1. Chocolate Chip Cookies

Chocolate chip cookies are timeless, tasty desserts. A recipe that calls for unsalted butter, granulated sugar, brown sugar, eggs, vanilla extract, all-purpose flour, and semisweet chocolate chips delivers consistently chewy, rich cookies, just as you might expect if someone offered you a homemade chocolate chip cookie.

Ingredients

1 cup (226g) unsalted butter, softened
1 cup (200g) granulated sugar
1 cup (220g) packed brown sugar
2 large eggs
2 teaspoons vanilla extract
3 cups (360g) all-purpose flour
2 cups (340g) semisweet chocolate chips

Instructions

1. Set the oven to 350°F (175°C) to warm up before baking.

2. In a very big bowl, beat together the butter (which ought to be softened by now), the granulated sugar, and the brown sugar until the mixture is smooth.

3. Mix in the eggs one at a time, then mix in the vanilla extract.

4. Slowly mix in the flour, then incorporate the chocolate chips.

5. Using a rounded spoon, drop the mixture onto ungreased baking sheets and bake at 350 F for about 10-12 minutes. Keep an eye on the cookies, and when they look slightly puffed and have just begun to brown at the edges, take them out! Let them cool on the sheets for a few minutes before putting them on wire racks to finish cooling. Enjoy!

2. Sugar Cookies

2. Sugar Cookies

Classic and delightful, sugar cookies are made with all-purpose flour, unsalted butter, granulated sugar, an egg, and just the right amount of leavening. They could work as a blank canvas for frosting or other decorations, but we prefer to keep them simple and let their satisfying sweetness shine.

Ingredients

2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
1 egg
1 teaspoon vanilla extract

Instructions

1. Set your oven to 375°F (190°C) in order to prepare it. Prepare a baking sheet by lining it with either parchment paper or a silicone baking mat.

2. In a mixing bowl, combine the flour, baking soda, and baking powder and whisk them together. Set the bowl aside.

3. In a big bowl, cream the butter and sugar until smooth. Add in the egg and vanilla extract. Gradually mix in the dry ingredients.

4. Scoop rounded tablespoons of dough and roll them into balls. Place the balls on the prepared baking sheets. Using the bottom of a glass, flatten each ball slightly. Bake for 8 to 10 minutes, or until the cookies are golden brown. Let the cookies sit on the baking sheets for 2 minutes before moving them to a wire rack. Let them cool completely before serving.

3. Peanut Butter Cookies

3. Peanut Butter Cookies

Peanut Butter Cookies are a simple and speedy delight, comprised of few uncomplicated components: creamy peanut butter, granulated sugar, and vanilla extract. That makes them a prime candidate for the cookie jar, satisfying the urge for a homemade classic.

They are the quickest of cookies.

Ingredients

1 cup creamy peanut butter
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 teaspoon baking soda

Instructions

1. Set the temperature of your oven to 350°F (175°C) in order to preheat it. Prepare a baking sheet by lining it with parchment paper.

2. In a big mixing bowl, blend the smooth and well-mixed peanut butter, sugar, egg, vanilla extract, and baking soda.

3. Shape the dough into 1-inch balls and put them on the prepared baking sheet so that they are about 2 inches apart. Use a fork to flatten each ball, being sure to create a crisscross pattern and not an alligator-skin pattern. You should see an indentation from the fork on both sides of the flattened ball.

4. Preheat oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper. Set aside. Place butter and sugar in a medium bowl. Using an electric mixer, cream together until light and fluffy, about 2 minutes. Add egg and vanilla; beat until smooth.

4. Oatmeal Raisin Cookies

4. Oatmeal Raisin Cookies

Old-fashioned oats, combined with the sweetness of raisins and rich ingredients like butter and brown sugar, form the basis of a treat that is somehow both all-American and retro. It is a hard cookie that is slightly chewy, giving it an interesting and pleasant texture.

It also happens to be full of wholesome ingredients and is very easy to make.

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats
  • 1 cup raisins

Instructions

1. Set your oven to 350°F (175°C) to warm up while you prepare the ingredients. In a bowl, using an electric mixer on medium speed, cream the butter with the two sugars until the mixture is light and fluffy. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla.

2. In a different mixing basin, combine the flour, baking soda, cinnamon, and salt. Proceed to mix the aforementioned items together in a steady flow into the creamed goods. Once you have achieved the desired consistency, fold in the oats and raisins.

3. Spoon the unrounded, soft dough in spoonfuls onto the ungreased baking sheets to make roughly rounded cookies. Bake for 10 to 12 minutes, or until the edges are golden brown. Move the baking sheets off the heated oven and onto a heatproof surface. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

7. Tahini Cookies

7. Tahini Cookies

Tahini Cookies make a delightful confection made with tahini, all-purpose flour, and both granulated and powdered sugars. They offer a nutty flavor that pairs well with the slightly crisp texture, and they make for a simple yet satisfying snack.

Ingredients

1/2 cup powdered sugar

4. Mold the dough into tiny spheres (roughly

2.54 cm across) and set them on the waiting oven sheet. Using a standard dinner fork, depress the center of each sphere to obtain what is called, in some circles, a “slightly flattened ball.”

Ingredients

  • 1 cup unsalted butter
  • 1 1/2 cups packed brown sugar
  • 1 large egg
  • 2 tablespoons bourbon
  • 2 1/4 cups all-purpose flour

2. In a big bowl, mix the browned butter and brown sugar until you get a smooth blend. Then, add the egg and bourbon, beating until they are fully combined.

3. In another bowl, whisk the flour, the baking soda, and the cinnamon together. Gradually add the dry ingredient mixture to the wet ingredients, and stir until just combined.

9. Lavender Shortbread Cookies

9. Lavender Shortbread Cookies

Lavender Shortbread Cookies are delicate treats made with softened unsalted butter, granulated sugar, and dried culinary lavender. These cookies are buttery and have a faint floral scent.

1 cup unsalted butter, softened
1/2 cup granulated sugar
2 cups all-purpose flour
1 tablespoon dried culinary lavender
1 teaspoon vanilla extract
1/4 teaspoon salt

Instructions

1. In a big mixing bowl, blend the softened butter and the granulated sugar well together until they are light and fluffy. Doing this creaming step well is important for the final texture of the cookies. If you have a stand mixer, use the paddle attachment on medium speed for about 3 minutes until the mixture looks pale and fluffy. If you use a hand mixer, beat the mixture for a few minutes longer.

2. Add the vanilla extract, and then slowly incorporate the flour, dried lavender, and salt into the mixture until the dough comes together.

3. Place the dough on a surface that has been lightly sprinkled with flour, and roll it out to a thickness of approximately 1/4 inch. Use cookie cutters to cut it into whatever shapes you desire.

4. Put the cookies on a baking sheet that has been lined with parchment paper, and refrigerate for 15–20 minutes. While the cookies are chilling, preheat the oven to 325°F (165°C). Bake the cookies for 12–15 minutes, or until the edges are just turning lightly golden. Cool the cookies on a wire rack before serving.

1 teaspoon vanilla extract
2 cups all-purpose flour
