I love cottage cheese! It is a dessert ingredient that is totally underrated.

I love it!

Ingredients:

Crust:

1 cup graham cracker crumbs

2 tablespoons white sugar

1/4 teaspoon ground cinnamon

1/4 cup melted butter

Filling:

2 cups cottage cheese

1/2 cup milk

2 eggs

3 tablespoons all-purpose flour

2 tablespoons lemon juice

1 teaspoon vanilla extract

2/3 cup white sugar

1/4 teaspoon salt

Instructions:

Prepare the crust: Mix graham cracker crumbs, sugar, cinnamon, and melted butter. Press into the bottom of an 8-inch square pan.

Prepare the filling: Blend cottage cheese, milk, eggs, flour, lemon juice, vanilla extract, sugar, and salt until smooth. Pour into the crust.

Bake: Bake at 325°F (165°C) for 60 minutes or until firm. Let cool completely before serving.

Prepare Pineapple: If using canned pineapple, make sure to drain it well. If the chunks are too large, cut them into bite-sized pieces.

1 large egg

1 large egg white

Instructions:

Prepare the Crust:

Preheat oven to 350°F (175°C).

Line an 8-inch square baking pan with foil and spray with cooking spray.

Beat butter, brown sugar, salt, and mace until smooth. Add flour and mix until combined.

Press into the pan and bake for 20 minutes. Cool.

Prepare the Filling:

Blend cottage cheese until smooth.

Add sugar, flour, lemon zest, lemon juice, baking powder, egg, and egg white, and blend until smooth.

Pour over crust.

Bake for 25 minutes or until set.

Cool completely, then refrigerate for at least 8 hours before serving.

Preheat Oven: Preheat your oven to 350°F (175°C). Spray an 8×8 inch baking dish with nonstick cooking spray.

Prepare Peaches: Mix peaches with 1/4 cup of sugar and pour into the prepared baking dish.

Make Crumble Topping: In a bowl, combine flour, 1 cup of sugar, baking powder, salt, and the egg. Mix until small crumbles form.

Layer Ingredients: Spread the cottage cheese evenly over the peaches. Then, sprinkle the crumble mixture over the top.

Add Butter: Pour melted butter evenly over the crumble topping.

Bake: Bake in the preheated oven for 40-55 minutes, or until the topping is golden brown and the filling is bubbly. Start checking at 30 minutes.
