Blend cottage cheese, pumpkin puree, banana, pumpkin pie spice and almond milk in a food processor to make a refreshing and nutritious smoothie.
Blend on high speed until smooth and creamy, typically for about 1-2 minutes.

I had recently discovered a new favorite flavor combination involving caramel and apple, so I thought I’d blend my cottage cheese smoothie with that. As it turns out, the addition of the creaminess that cottage cheese brings to the mix just makes for a silky, sweet dessert or breakfast drink that’s super-protein packed at the same time.

Who doesn’t want a healthy-ish version of an ‘apple pie’ milkshake in a glass? That’s all the excuse I needed to start experimenting with caramel apple cottage cheese smoothies whenever the craving hit.

This wasn’t one I could live without, and it seemed worthy of bumping up a few notches, adding it to my repertoire of gourmet cottage cheese snack recipes.

1 medium apple, peeled, cored, and diced
2 tablespoons caramel sauce
1/2 teaspoon cinnamon
1/2 cup milk (or a milk alternative)

Instructions

In a blender, combine the cottage cheese, diced apple, caramel sauce, cinnamon, and milk.
Blend on high speed until smooth and creamy.
Taste and adjust sweetness if desired by adding more caramel sauce.
