For me, there’s no better way to cook chicken than in the slow cooker. Cleanup is a snap.
The flavors meld together perfectly with all the time we can afford to give them. And chicken, if you ask me, has never turned out so juicy and tender as it does in the slow cooker.
I like to use Mediterranean flavors (think lemon, garlic, and fresh thyme or rosemary). Sometimes, I just wedge some carrots and onions around the chicken for a simple side dish and let the slow cooker work its magic.
On the days when I want to kick things up a notch, I go for diced tomatoes or a splash of white wine to really enhance the flavors. The beauty of using a slow cooker is that you can vary these recipes to suit your taste.

I made the Tuscan garlic chicken today but I did not have the time to use the crockpot and did it on the stovetop. I lightly browned the chicken and simmered it in the chicken broth, garlic and Italian seasoning about 45 minutes until it was nice and tender. Turned the burner on low and put in the heavy cream, Parmesan cheese and spinach until everything was warmed about 5 minutes more. What a flavorful and easy dinner! My son and I absolutely loved it!
