2. Put the pan on the heat and add the mushrooms. Cook them until they are soft. Then add in the chicken stock and cream, and let everything together simmer for a while until it has thickened slightly.

3. Put the chicken and mushroom filling into a baking dish. Cover with the puff pastry, trimming the edges if necessary. Cut a few small slits in the top of the pastry for steam to escape.

4. Preheat the oven and bake the puff pastry for 20-25 minutes or until golden and crisp. Let cool slightly before serving.

Once it has reached that visually satisfying place, take it out and allow it to cool for a couple of minutes. That is really key, letting it cool a bit. It will be too hot to eat if you don’t.
