I’m a great fan of a breakfast pick-me-up and a hummus toast is another favorite (nutrient-rich, protein, fat, fibre, crunch, creaminess, deliciousness) – so it’s another one for the fast morning breakfast list.
But perhaps most of all, hummus toast is delightfully delicious. Flavor options are seemingly endless.
Go Mediterranean with a topping of olives, tomatoes and feta, or bright and fresh with sliced avocado and microgreens.
It’s a vehicle for leftover veggies that have been hanging out in the back of the fridge, and a blank palette for getting in some extra leafy greens.
The sky is the limit. It’ll go with anything.

Ingredients
2 slices of whole grain bread
1/2 cup of classic hummus (store-bought or homemade)
1 medium ripe avocado, sliced
1 small tomato, sliced

Instructions

2. Avocado Hummus Toast
I can’t think of many healthy snacks that I enjoy more, and for a good reason – it’s just so creamy and the flavors work really well together. Mine are always layered perfectly with ripe avo and richly luscious hummus.
It’s so delicious and nutritious, I like to sprinkle over my favorite spices. This works really well as a quick breakfast .
Ingredients
2 ripe avocados
1 cup canned chickpeas, drained and rinsed
1/4 cup tahini
1/4 cup freshly squeezed lemon juice
2 garlic cloves, minced
2 tablespoons extra-virgin olive oil
1/2 teaspoon ground cumin
Salt to taste
4 slices of whole grain or sourdough bread
Optional toppings: cherry tomatoes, radishes, microgreens, red pepper flakes, sesame seeds
Instructions
1 Prepare the Avocados: Peel and remove the pit from the avocados, add the flesh to the food processor.
2. Blend Hummus Base Combine chickpeas, tahini, lemon juice, garlic, olive oil, ground cumin and salt in food processor.
3.Blend Until Smooth: Blend the mixture until it is smooth and creamy. Stop and scrape down the sides once or twice, as necessary.
4. Toast the Bread: While the hummus is whirring away, get your whole grain or sourdough bread slices ready and toasted on the side by unplugging them to a golden perfection.
5. Mash and Toast: Spread a thick layer of the avocado hummus over the toast.

This brekkie or snack is one of my favorite ways to start the day – saving a classic for the best. Hummus is such a creamy, smooth, well, luxurious spread; throw in some good Mediterranean flavors and a bit of extra virgin olive oil over properly toasted bread and you’ve got instant class.
Ingredients
4 slices of whole-grain bread, toasted
1 cup store-bought or homemade hummus
1 small cucumber, thinly sliced
1 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup kalamata olives, pitted and sliced
1/4 cup feta cheese, crumbled
2 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
Salt and black pepper to taste
Fresh parsley or basil for garnish (optional)
Instructions
1.Toast Bread: Lightly toast the slices of whole-grain bread until golden brown.
2.Gather Garnishes: Slice the cucumber and red onion very thinly, cut the cherry tomatoes in half, and slice the kalamata olives.
3.Slick it with Hummus: Scoop a good dollp of hummus onto each slice of lightly toasted bread and spread it out evenly.

I love a blast of color and flavor all over my plate. When I want to eat healthy and tasty, I have a creamy, crunchy, fresh savory toast. If you want to eat healthy and enjoy a tasty mean at the same time, this dish is great.
Every time I eat it it’s a vivid, tasty gourmand meal.
Ingredients
4 slices of whole-grain bread
1 cup of classic hummus
1 small cucumber, thinly sliced
1 small tomato, thinly sliced
1 small avocado, thinly sliced
1/4 red onion, thinly sliced
1/4 cup shredded carrots
1/4 cup radishes, thinly sliced
Handful of fresh spinach leaves
1 tablespoon olive oil (optional)
Salt and pepper to taste
Fresh herbs (parsley, cilantro, or basil) for garnish

I think there is no better way to start the day with one big burst of flavor followed by a tongue-warming hit of heat.
Trying this delicious twist on a snack favorite, I take that first bite and I am sold – the creamy hummus complemented with the fiery Sriracha is so perfect, I could eat this for breakfast every morning and I would be satisfied.
This toast is full of flavor and a kick that I love.
Ingredients
1 cup cooked chickpeas (or 1 can, drained and rinsed)
3 tablespoons tahini
2 cloves garlic, minced
2 tablespoons fresh lemon juice
2 tablespoons olive oil
1-2 tablespoons Sriracha sauce (adjust to taste)
1 teaspoon ground cumin
1/4 teaspoon smoked paprika (plus extra for garnish)
Salt, to taste
4 slices of your favorite bread (sourdough or multigrain works well)

I love trying out new flavors. These days, I’m obsessed with something that I think makes the perfect snack.
Blended creamy hummus spiced with roasted red peppers that are sweet and smoky and spread on toasted bread. My mouth waters just thinking about it.
It’s become a treat that I turn to when I’m hungry because it’s quick and easy to make.
Ingredients
2 large red bell peppers (roasted and peeled)
1 can (15 ounces) chickpeas (drained and rinsed)3. 1/4 cup tahini
3 tablespoons extra-virgin olive oil5. 2 tablespoons fresh lemon juice
2 garlic cloves (minced)7. 1 teaspoon ground cumin

- Roast Peppers A. Preheat the oven to 450°F (230°C).
- Place the red bell peppers on a baking sheet and roast for 20-25 minutes, turning every so often, until the outside skin is charred.
- Remove from the oven and place in a bowl covered with plastic wrap.
Let the steam for 10 minutes. - Peel off the outside skin and remove all seeds.
- Make Hummus: Put the roasted red peppers, chickpeas, tahini, olive oil, lemon juice, crushed garlic and cumin in a food processor and blend until smooth and creamy, adding water as needed to achieve the desired consistency.
- Season: Taste the hummus and season with salt and freshly ground black pepper, as needed
7. Beet Hummus Toast
I ADORE this dish. I use it so much now; it’s my go-to snack whenever I need a quick pick-me-up.
The warm, deep flavor; the mouth-watering texture. I think the flavors are balanced in just the right way, and it provides me with such a nutritional boost.
It’s just a beautiful, healthy dish that gives me a burst of positivity.
Ingredients
1 medium beet, roasted and peeled
1 can (15 oz) chickpeas, drained and rinsed
2 cloves garlic
3 tbsp tahini
2 tbsp fresh lemon juice
1-2 tbsp olive oil
1/2 tsp ground cumin
Salt to taste
Freshly ground black pepper to taste
4 slices of whole-grain bread
Optional toppings: crumbled feta cheese, microgreens, pumpkin seeds, or a drizzle of olive oil

1. Preheat the oven to 400°F (200°C).
Then wrap the beetroot in aluminium foil and roast it for 45 minutes to an hour, until it is tender. Allow it to cool, peel, and chop coarsely.
2. Pulse roasted beet, chickpeas, garlic, tahini, lemon juice and cumin in food processor until mixture starts to combine.
3. While the food processor is turned on, slowly drizzle in the olive oil until the hummus is the texture you like.

I have returned to making this again and again, just to enjoy the zing of fresh herbs perking up hummus.
To me, it’s the best of all worlds; the creamy and tangy flavors sing with the zing of freshly minced herbs. When I’m feeling a need for a quick, satisfying meal, this is what I think of; a little bit of heaven on toast.
Herb Infused Hummus Toast
Ingredients
1 cup chickpeas (cooked or canned, drained, and rinsed)
3 tbsp tahini
2 tbsp olive oil
2 tbsp lemon juice (freshly squeezed)
2 cloves garlic (minced)
1/2 tsp ground cumin
Salt to taste
1/4 cup fresh parsley leaves (finely chopped)
1/4 cup fresh cilantro leaves (finely chopped)
1/4 cup fresh dill (finely chopped)
4 slices of whole grain bread
Cherry tomatoes, sliced (optional garnish)
Fresh herbs, for garnish (optional)
Instructions
1. Prepare Chickpeas: In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, garlic, cumin, and salt; process until well-combined and creamy.

Ingredients
1 can (15 oz) chickpeas, drained and rinsed
1/3 cup sun-dried tomatoes (packed in oil), drained
2 tbsp tahini
2 tbsp olive oil
2 cloves garlic
Juice of 1 lemon
1/2 tsp ground cumin
Salt, to taste
4 slices of your favorite bread, toasted

I love eating a big breakfast, and one of my favorite things to do is take two of my favorite spreads and mash them together and eat it as toast. If I’m having dinner and need a snack, I will have this toast.
I just really really like it.
Ingredients
4 slices of artisan bread, toasted
1 cup of hummus (store-bought or homemade)
¼ cup of pesto (store-bought or homemade)
1 avocado, sliced
1 cup cherry tomatoes, halved
¼ cup feta cheese, crumbled
Fresh basil leaves, for garnish
Olive oil, for drizzling
Salt and pepper, to taste
Instructions
- Toast the bread: Toast the 4 pieces of artisan bread lightly until golden brown.
- Make the pesto hummus: In a bowl, mix together 1 cup of hummus with ¼ cup of pesto until thoroughly blended.
- Spread the hummus: Evenly spread the pesto hummus mixture over each piece of the toasted bread.
- Top with avocado: Place slices of avocado on top of the hummus layer.
- Add cherry tomatoes: Distribute the halved cherry tomatoes evenly across the avocado.
- Sprinkle cheese: Scatter crumbled feta cheese over the top of each toast.

11. Sweet Potato Hummus Toast
The very texture of a creamy sweet potato smooshed with savory hummus is perfectly pungent and I really love the combination of flavors.
It’s as nutritionally supplemental as it is tasty and it fills my body with energy. I like how its the contrast of the crumbly toast, with the smoothed paste, that makes every bite something to look forward to.
It feels gourmet, foodie and interesting.
Ingredients
1 medium sweet potato
1 can (15 oz) chickpeas, drained and rinsed
2 tbsp tahini
2 tbsp olive oil
2 cloves garlic, minced
1 lemon, juiced
1/2 tsp ground cumin
1/4 tsp paprika
Salt and pepper, to taste
4 slices of whole-grain bread
Optional toppings: avocado slices, cherry tomatoes, arugula, sesame seeds
Instructions
- Prepare the Sweet Potato: Heat the oven to 400°F (200°C).
Pierce the sweet potato all over with a fork. Wrap it in foil and bake for 45-50 minutes, or until it yields to gentle pressure.
