There’s just something entirely satisfying about toast. Certainly, it’s hard to think of a better, more nutritious, delicious and adaptable meal than the cottage cheese toast power pack, which combines two textures – crunch and cream – and sets them off in one happy bite.

Cottage cheese liberally salted is essentially a neutral flavored, thick, cream delivery system open to all manner of topping possibilities: sweet and savory alike.

I can grab some whole-grain bread, slather it with cottage cheese, and head out the door on busy mornings.

On slower mornings, I tinker with different toppings before finishing it off with something sweet, like a smear of honey with an assortment of fresh berries or sliced avocado, cherry tomatoes and a sprinkling of everything bagel seasoning.

In particular, I’m fascinated by how many different palates and dietary lifestyles have accepted this seemingly weird toast combination as a new food trend, and I feel like it really is the culinary chameleon.

  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 1/2 cup cottage cheese
  • 10-12 cherry tomatoes
  • 1 tablespoon extra-virgin olive oil
  • Salt and pepper to taste
  • Fresh basil leaves (optional)
  • Lemon juice (optional)

Instructions

1. Toast the whole grain bread slices until they are golden and crispy.

2. While the bread is toasting, cut the avocado in half and remove the pit. Scoop the flesh into a bowl and use a fork to mash it until smooth. Add a pinch of salt and pepper.

3. Spread an even layer of cottage cheese on each slice of toasted bread.

It’s so simple and I love the flavor and rough textural contrasts with the smooth and creaminess of the cottage cheese. For me, it’s the perfect taste and health!

Ingredients

  • 4 slices of whole-grain or rye bread
  • 8 oz (225 g) smoked salmon, thinly sliced
  • 1 cup (240 g) cottage cheese
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp lemon juice
  • 1 tbsp capers, drained and rinsed
  • Salt and black pepper to taste
  • Optional: Lemon zest, for garnish

Instructions

1. Toast the bread slices until they are golden and crisp.

2. In a bowl, mix together the cottage cheese, fresh dill, lemon juice, salt and black pepper.

I’m always looking for a light snack with a health kick, and now I have found a filling but refreshing lunch alternative-crisp veg with creamy cottage cheese. Combining the moreish crunch of cucumber and radish with the slightly more substantial creaminess of cottage cheese on toasted bread.

Simple but filling.

Ingredients

  • 4 slices of whole-grain bread
  • 1 cup cottage cheese
  • 1 cucumber, thinly sliced
  • 4 radishes, thinly sliced
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

  1. Lightly brush both slices of whole meal bread with olive oil. Place in a pre-heated oven at 375°F (190°C) for around 5-7 minutes or until golden and crispy.

4 slices of whole-grain bread
1 cup full-fat or low-fat cottage cheese

Finding a good way to begin the day has always been one of my priorities, and since finding it, I’ve always enjoyed having an apple with cottage cheese for breakfast; the blend of their taste impresses me, you can even try cottage cheese eaten with a crisp, sweet apple and a bit of cinnamon. 

Ingredients

  • 4 slices of whole grain bread
  • 1 cup cottage cheese
  • 1 large apple, thinly sliced
  • 1 tablespoon honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1 teaspoon lemon juice (optional)
  • 1 tablespoon chopped nuts (optional)

Instructions

1. Toast the whole grain bread slices until they are golden brown and crispy.

2. Toast the bread while you combine the cottage cheese with honey, cinnamon and nutmeg (if you’re using it) in a small bowl.

Someone recently showed me how to make the combination of cottage cheese, spinach and sun dried tomatoes on toast, and it has quickly become one of my favorite breakfasts. I like the way the creaminess and slight sweetness of the cheese works against the earthy quality of the spinach and the tart, spicy burst of the tomatoes.

It’s healthy and filling, and I like how the ingredients come together to make a satisfying mouthful each time.

Ingredients

  • 4 slices of whole-grain bread
  • 1 cup cottage cheese
  • 1 cup fresh spinach leaves, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 small garlic clove, minced
  • 1 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1/2 tsp dried oregano (optional)
  • 1/2 tsp red pepper flakes (optional)

Instructions

1. Toast the whole-grain bread slices until they are golden brown.

2. Get a small pan going over medium heat with the olive oil. Add the minced garlic and sauté until fragrant, about 30 seconds to 1 minute.

3. Stir in the chopped spinach and sauté until wilted, 2-3 minutes. Remove from the heat.

4. Place cottage cheese, sautéed chopped spinach, chopped sun-dried tomatoes, salt, pepper, dried oregano, and red pepper flakes (optional) into a medium bowl, and mix thoroughly.

5. Spread the cottage cheese mixture evenly over each toasted bread slice.

6. Serve immediately and enjoy your Spinach and Sun-Dried Tomato Cottage Cheese Toast!
