I love using zucchini in casseroles because it is such a flexible and nutritious vegetable.

Its mild taste and soft texture are just right for absorbing the strong, savory flavors of a casserole.

Besides, zucchini has low-calories, vitamins A & C, fiber as well as antioxidants so it’s a healthy addition to any meal.

I find that its ability to blend seamlessly with various ingredients while adding a slight crunch and moisture is why it’s a favorite in many of my casseroles.

Zucchini really improves the dish whether paired with cheese or meats or other vegetables offering a nutritious and delicious meal.

This is the mother of all comfort food: healthy and decadent rolled into one. Just the mention of it makes my mouth water.

In my opinion, zucchini is the ultimate comfort food, and this vegetable-filled casserole is one of the most flavorful ways to enjoy it. I love that the bitterness of the zucchini is balanced by the sweetness and creaminess of the cheese.

To me, it’s the perfect food for a busy weeknight, taking only minutes to prepare and coming out of the oven all golden-brown and bubbly.

Ingredients

4 medium zucchinis, sliced into thin rounds
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs
1 cup heavy cream

Instructions

Preheat oven to 375°F (190°C).
Layer zucchini slices in a greased baking dish.
Mix cheddar cheese, Parmesan cheese, and breadcrumbs in a bowl.
Pour over the zucchini a couple of centimetres of hot, whipping cream, then douse the mixture evenly with the cheese and breadcrumb blend.
Bake for 25-30 minutes until the top is golden and the zucchini is tender.

4 medium zucchinis, sliced
1 cup marinara sauce
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cloves garlic, minced

Instructions

Preheat oven to 375°F (190°C).
Layer the sliced zucchinis in a baking dish and top with marinara sauce.
Sprinkle minced garlic over the zucchini and sauce mixture.
Cover with shredded mozzarella and grated Parmesan cheese.

This one is perfect for family meals, game night, or a casual gathering. The slices of zucchini melt into the creamy cheesy sauce and become the star of the plate.

4 medium zucchinis, thinly sliced
1 cup heavy cream
1 cup shredded Gruyère cheese
2 cloves garlic, minced
Salt and pepper to taste

Instructions

Preheat your oven to 375°F (190°C).

Ingredients

2 large zucchinis, thinly sliced
1 cup cooked white rice
1 cup shredded cheddar cheese
1/2 cup diced onion
1 cup sour cream

Instructions

Preheat oven: Set your oven to 350°F (175°C).
Whisk ingredients: In a mixing bowl, whisk eggs, water and oil.
Add to bowl: Add zucchini, cooked rice, cheese, onion and sour cream to the mixing bowl.
Stir on top of stove: Stir over medium heat for a few minutes until the mixture thickens to a consistency that’s almost like air.
Proceed to baking dish: Spread the mixture out into a greased baking dish.
Bake: Put the dish in the oven and bake for 25-30 minutes until the top is brown and bubbling.
Serve: Take it out of the oven, let it cool for a few minutes and serve warm.

It is rich in flavors, textures and colors, while fresh ingredients are the reason for its perfect combination. It is a healthy and very generous dish, but at the same time it is very easy if you have basic cooking skills.

In my family, we don’t cook just to feed our stomachs, but to keep them full and healthy. I often serve this dish as the main course and everyone asks for seconds.

Ingredients

4 medium zucchinis, thinly sliced
2 cups cherry tomatoes, halved
1 cup crumbled feta cheese
1/4 cup extra virgin olive oil
1/4 cup chopped fresh basil

Instructions

Preheat the oven to 375°F (190°C).
Toss the zucchini slices and cherry tomatoes with the olive oil in a large bowl.
Layer the zucchini and tomatoes in a medium-sized baking dish.
Sprinkle the crumbled feta cheese evenly over the top.

Ingredients

2 medium zucchinis, sliced
1 pound ground beef
2 large tomatoes, sliced
1 cup shredded mozzarella cheese
1 medium onion, chopped

Instructions

Preheat the oven to 375°F (190°C).
Brown the ground beef and onion in the skillet over medium heat until the meat is browned and the onion is tender; drain off any fat.
Slice the zucchinis and layer them in a greased baking dish. Layer with a half of the ground beef mixture that you cooked earlier, then do another layer of zucchinis (shorter than the first one), layer with the rest of the beef mixture, and layer with slices of tomato.
Repeat the layers until all of the ingredients are used, topping with a layer of shredded mozzarella cheese.
Bake in preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Allow it to cool a little before serving.

4 cups shredded zucchini
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 large eggs, beaten
1 teaspoon garlic powder

Instructions

Preheat oven to 375°F (190°C) and grease a baking dish.
Squeeze excess moisture from the shredded zucchini using a cheesecloth or clean kitchen towel.
In a mixing bowl, combine the zucchini, cubed cheese, Parmesan, eggs and garlic powder.
Transfer the mixture to the prepared baking dish and spread evenly.
Then bake for 25-30 minutes or until top is golden brown and casserole is set. Let cool slightly before serving.

I am always so pleased to discover a healthy yet flavorsome recipe. I recently came up with one that’s become a household favorite.

I love how fresh, seasonal vegetables are mixed with the healthy wholegrains. 

Ingredients

2 medium zucchinis, thinly sliced
1 cup quinoa, rinsed and drained
1 1/2 cups vegetable broth
1 cup shredded mozzarella cheese
2 garlic cloves, minced

Instructions

Preheat oven to 375°F (190°C) and lightly grease a baking dish.
Cook quinoa in vegetable broth according to package instructions.
In the prepared baking dish, layer half the zucchini slices on the bottom.
Combine cooked quinoa with minced garlic and half the cheese, and spread over the zucchini layer.
Cover with remaining zucchini slices and cheese, and bake for 25-30 minutes until golden and bubbling.
