There’s little that can hold a candle to a slather of avocado toast for breakfast.

I’ll say that for myself – avocado toast is good. It is smooth, and substantial, and the consistency of avocado on toasted bread has mix-and-match-ability.

I know good things when I see them.

I like avocado toast best when I’m thinking of it as a healthy meal. Avocados have good amounts of vitamins E and K, and vitamin C, as well as good fats to keep me full till lunch, and to get me going in the morning. Toasted bread provides me with the grain I need to balance out the meal.

I love making avocado toast. It is one of my favorite dishes, the ultimate in simple, sophisticated.

There is nothing better than the softness of ripe avocados mixed with the crunch of a toasted slice of bread. All for the price of a couple of dollars.

The creaminess of avocados with the crunchy contrast of toast is such a great combination. I like to finish mine off with a sprinkle of salt, pepper, and a drizzle of olive oil.

If I’m feeling a little zesty, I might squeeze a wedge of lemon over it. Or if I fancy something fresh, I’ll throw in some cherry tomatoes.

Avocado toast is great for any time of the day: brunch, lunch, dinner.

Classic Avocado Toast

Ingredients

1 ripe avocado
2 slices of whole-grain bread
1 tablespoon fresh lemon juice
Salt, to taste
Black pepper, to taste
Red pepper flakes, optional (for garnish)

Instructions

Toast the slices of whole-grain bread until golden brown.
Toast the bread and, while it’s doing that, cut the avocado in half, scoop the pit out, and transfer the flesh to a bowl.
Add the lemon juice, and then mash the avocado with a fork until it’s completely smooth but still somewhere in between totally pureed and totally chunky.
Season the mashed avocado with salt and black pepper to taste.
Spread the avocado mixture evenly over the toasted bread slices.
Garnish with a pinch of red pepper flakes if desired, and serve immediately.

The taste combination not only kicks me into gear with a mitigated blast of flavor but also provides a heightened contrast that keeps my mouth humming along for the rest of the day. I like the fact that it is simple, yet sophisticated, and lets me experience a bit of gourmet in my own kitchen in a matter of minutes.

It’s one of my favorite comfort foods – with a bit of health and fitness thrown in.

Ingredients

1 ripe avocado
2 slices of whole grain bread
1 tbsp Sriracha sauce
1/2 lime, juiced
Salt and pepper, to taste
Fresh cilantro or chives, for garnish

Instructions

Toast the slices of whole grain bread to your desired level of crispiness. Mash the ripe, peeled, pitted avocado with the lime juice and season with salt and pepper.

It is the fresh herbs and drop of lemon juice that take it to the next level, as if I am having a small Mediterranean vacation at my kitchen counter.

Mediterranean Avocado Toast Recipe:

Ingredients

2 slices of whole-grain or sourdough bread
1 ripe avocado
1/4 cup crumbled feta cheese
1/4 cup cherry tomatoes, halved
1 tbsp extra virgin olive oil
Salt and pepper to taste

Instructions

Toast Bread: Toast the slices of bread until golden brown.
Mash Avocado: Cut avocado in half around the big central seed, remove the seed, and scoop the flesh into a bowl. Use a fork or spoon to mash until smooth.
Spread Avocado: Evenly spread the mashed avocado onto the toasted bread.
Add Toppings: Top each slice with crumbled feta cheese and halved cherry tomatoes.
Drizzle and Season: Drizzle with extra virgin olive oil and season with salt and pepper to taste.

Ingredients

2 ripe avocados, peeled, pitted, and mashed
4 slices of whole-grain bread, toasted
1 cup of cherry tomatoes, halved
1 cup of fresh mozzarella balls, halved
Fresh basil leaves, torn
Balsamic glaze, for drizzling
Salt and pepper to taste

Optional Eggs

Instructions

Toast the slices of whole-grain bread until golden and crispy.
Evenly spread mashed avocado onto each slice of toasted bread.
Top the avocado with halved cherry tomatoes and fresh mozzarella balls.
Sprinkle torn basil leaves over the tomato and mozzarella.
Season with salt and pepper to taste.
Drizzle with balsamic glaze before serving.

Toast Bread: Toast the slices of bread until golden brown.
Prep the avocado: While the bread is toasting, cut the avocado lengthwise in half and remove the pit.
Scoop out the flesh with a spoon and place it in a bowl. Season with salt and pepper to taste.
Bring to the Boil: Add the white vinegar to a saucepan of water until it just simmers.
Poach Eggs: Crack each egg into a small bowl or ramekin.
Make a whirlpool in the simmering water, then slide each egg into the water. Poach for 3-4 minutes until the whites are set but the yolks are still soft.
Assemble Toast: Spread the mashed avocado evenly onto the toasted bread slices. Top with Eggs: Take each poached egg out of the water with a slotted spoon and put one egg on top of each slice of avocado toast.

2 slices of whole-grain bread
1 ripe avocado
1 teaspoon lemon juice
1 tablespoon Everything Bagel seasoning
Salt and pepper to taste

I like the way that the tomatoes give me a pop of flavor and a bit of heat in an otherwise cool, refreshing morning meal. It feels like an indulgent treat, but is simple enough to throw together for a speedy, satisfying breakfast.

This is my go-to when I don’t want a heavy, dense breakfast but still want something filling.

Ingredients

1 ripe avocado
4 slices of whole-grain bread
1 cup cherry tomatoes
1 tablespoon olive oil
Salt and pepper, to taste
Fresh basil leaves, for garnish

Instructions

Preheat the oven to 400°F (200°C). Toss the cherry tomatoes with olive oil, salt, and pepper, and spread them on a baking sheet.
Roast the tomatoes in the oven for 15 to 20 minutes, until they’re soft and caramelized.
While tomatoes are roasting, toast the whole-grain bread to your desired level of crispiness.
Put the ripe avocado in a bowl and roughly mash it with a fork; season with salt and pepper to taste.
Spread the mashed avocado evenly over the toasted bread slices.
End each slice with some of the roasted tomatoes, and garnish with basil just before eating.
