In my opinion, you can’t get anything better than peach cobbler served hot and with a scoop of vanilla ice cream. I’m a big fan of that good old classic dessert.

Ingredients

4 cups fresh or canned peaches, sliced
1 cup granulated sugar
1 cup self-rising flour
1 cup milk
1/2 cup unsalted butter, melted

Instructions

Preheat oven to 350°F (175°C). Pour the melted butter into a 9×13-inch baking dish.
In a medium bowl, mix the flour, sugar, and milk to create a batter.
Pour the batter over the melted butter in the baking dish—do not stir.
Evenly distribute the peach slices over the batter—do not stir.
Bake for 35-45 minutes, until the top is golden brown and a toothpick inserted into the centre comes out clean.
Allow to cool before serving.

It is divine. I love the texture, and memories of summer days and family gatherings and everything good in the world pop into my mind.

I think this pie is the posterchild for comfort food. It’s as close to perfection as you could hope to get, deliciously sweet and just a little tart, a perfectly balanced combination of ingredients.

Peach Pie

Ingredients

5-6 ripe peaches, peeled, pitted, and sliced
1 cup granulated sugar
1/4 cup all-purpose flour
1 tsp ground cinnamon
1 double pie crust (store-bought or homemade)

Instructions

Preheat oven to 425°F (220°C).
In a large bowl, combine sliced peaches, sugar, flour, and cinnamon.
Mix well.
Top with the other pie crust and poke some holes in it.
Bake at 425 degrees Fahrenheit for 15 minutes, turning the heat down to 350 and baking for another 15 minutes or so until the top is nice and golden brown.
Let cool on a rack.
Slice and dig in. Cover with a second pie crust, crimp the edges and make vent slits.
Bake at 375°F for 45-50 minutes, or until the crust is golden brown and the filling is bubbling. Let cool before serving.

When I bake it, my kitchen fills with its sweet smell, which has a way of making any home feel more cosy. If I’m having people over for dinner, it’s a sure crowd pleaser because it’s easily prepared, and its seasonal flavors give it just the right amount of panache.

Ingredients

4 cups sliced peaches (fresh or canned, drained)
1/2 cup granulated sugar
1/2 cup all-purpose flour
1/2 cup rolled oats
1/4 cup unsalted butter, melted

Instructions

Preheat your oven to 350°F (175°C) and lightly grease an 8-inch square baking dish.
Spread the sliced peaches evenly in the prepared baking dish.
In a medium bowl, combine the sugar, flour, and oats. Mix well.

1 premade pie crust
4 ripe peaches, sliced
1/4 cup granulated sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon

Instructions

Preheat oven to 375°F (190°C).
Roll the pie dough out on a floured surface and press it into a tart pan, cutting off the excess.
Toss the peach slices in a bowl with the granulated sugar, the flour, and cinnamon.
Arrange the peach mixture evenly over the crust in the tart pan.
Place in the oven for 35 to 40 mins until the crust is golden brown and the peaches are tender. Cool before serving.

4 tablespoons unsalted butter
1/2 cup brown sugar, packed
2-3 medium peaches, peeled, pitted, and sliced
1 cup cake flour
1 cup granulated sugar
2/3 cup milk

Instructions

Preheat oven to 350°F (175°C); melt butter in a 9-inch round cake pan. Sprinkle brown sugar over melted butter.
Arrange peach slices in an even layer over the brown sugar.
Meanwhile, in a separate bowl, stir together cake flour and sugar.
Slowly add milk, beating until smooth.
Pour the batter over the peaches, spreading it evenly.
Preheat the oven to 350°F and line a round 9-inch cake tin with parchment paper. Mix the cake ingredients with a whisk.
The sour cream and lemon yogurt are optional, but they add a nice tanginess. Pour the mixture into the pan and bake for 45-50 minutes, or until a toothpick inserted into the centre comes out clean.

There’s something gorgeous about a peach galette – something about how its rusticity and its simple, elegant nature. There’s something about that buttery, flaky crust and those sweet, juicy peaches that feels like a culmination of summer.

About four years ago, I first tried making this recipe and immediately fell in love with the process and the outcome. There is nothing like eating a peach galette with friends and family at dusk to make me feel at home.

Ingredients

1 pie crust (store-bought or homemade)
4-5 ripe peaches, thinly sliced
1/4 cup granulated sugar
1 tablespoon cornstarch
1 tablespoon lemon juice

Instructions

Preheat oven: Preheat your oven to 375°F (190°C).
Peaches: Toss thinly sliced peaches in a big bowl with sugar, cornstarch, and lemon juice until coated.
To assemble the galette: Roll out the pie dough on a piece of parchment paper on a baking sheet. Pile the peach mixture into the centre, leaving a 2-inch border.
Fold the edges: Fold quarters of the dough over the peaches, pleating as necessary to enclose the filling.
Bake: 40-45 minutes, until golden and bubbly, or until the crust is golden and the juices are bubbly.
It really doesn’t matter. Let it cool.
Serve.

1/4 cup granulated sugar
2 cups all-purpose flour
1 cup heavy cream
1 teaspoon baking powder

Instructions

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a bowl, combine sliced peaches and granulated sugar.
Let it sit to macerate.
In another bowl whisk together flour and baking powder.
Gradually incorporate heavy cream and whisk until you get a dough.
Drop spoonfuls of dough on the baking sheet and bake for 12-15 minutes until golden brown.
Butter four shortcakes, split them in half, spoon the macerated peaches over the bottom halves, and cover with the top halves. Serve immediately.

4 ripe peaches, peeled, pitted, and chopped
1 cup granulated sugar
2 cups heavy cream
1 cup whole milk
1 teaspoon vanilla extract

Instructions

In a blender, puree the chopped peaches until smooth.
In a large mixing bowl, combine the pureed peaches with the sugar and stir until the sugar is dissolved.
Add the heavy cream, whole milk, and vanilla extract, whisking to combine.
Pour into an ice-cream maker and churn according to manufacturer’s instructions.
Let the ice-cream churn until frozen, then transfer it to a covered container and freeze for at least 4 hours before serving.

2 fresh peaches, peeled, pitted, and halved
1 can crescent roll dough (8 rolls)
1/2 cup butter, melted
1 cup sugar
1 teaspoon ground cinnamon

Instructions

Preheat the oven to 350°F (175°C) and grease a baking dish.
Wrap each half of a peach in a crescent roll, starting at the wider end, and nestle them in the greased baking dish.
In a small bowl, mix the melted butter, sugar, and cinnamon until well combined.
Pour the butter mixture evenly over the wrapped peach dumplings. Bake for 35 to 40 minutes, or until the dumplings are golden brown and the peaches are tender.

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
In a large bowl, mix together the flour, sugar, and baking powder.
For coffee cake: In a medium bowl, mix the egg into the dry ingredients until just combined.
Gently fold in the chopped peaches until evenly distributed.
Divide the batter evenly among the muffin cups and bake until a toothpick inserted into the centre comes out clean, about 20-25 minutes.

I am going to start by talking about my enjoyment of the taste and the look of this dessert. I really like the taste of ripe peaches and their cream-like texture.

However, this dessert has more texture elements processed with cream that I personally love. It can suit any occasion and it gives me its juicy and sweet taste.

Ingredients

2 ripe peaches, peeled, pitted, and thinly sliced
1 cup vanilla Greek yogurt
1/2 cup granola
2 tablespoons honey
Fresh mint leaves for garnish (optional)

Instructions

In a glass or parfait dish, layer 1/4 cup of vanilla Greek yogurt.
Add a layer of sliced peaches over the yogurt.
Sprinkle 2 tablespoons of granola on top of the peach layer.
Repeat the layers: yogurt, peaches, and granola.
Drizzle honey on top and garnish with fresh mint leaves if desired. Serve immediately.
